We are also having chicken legs so it isn't the only main course. I have no idea how much to prepare!

Cuban sandwiches so I'm assuming the open faced pulled pork kind...I'd suggest using a large crock pot and making a 5-6lb pork roast. Then let your guests build their sandwiches, have a basket full of toasted bread and a platter of cheese and pickles next to the crock pot. As fillers I would also suggest either black bean soup or a black bean/corn relish. Good Luck!

Sandiwches, while seemingly simple and easy, and incredibly labor-intensive. I'd suggest making them in advance (w/o lettuce or tomato) and refrigerating, then grilling in the oven between 2 cookie sheets, top oen weighted w/ a cast iron pot or two. Serve lettuce/tomato/onion on side of the sandwich like a garnish, that they can add to their sandwich or not.

So you need to know how many to make, not how to do it.
I would prepare a tray of 12 - 14 and cut them in three sections each. They will be more like an accompaniment that a main course.

Cuban Sandwiches
Yield: 24 Servings

Ingredients

1/2 c mayonnaise
1 canned chipotle chile in
-adobo; minced*
2 long loaves french bread;
-split
1/2 lb baked ham; thinly sliced
1/4 c thinly sliced red onion
1/2 lb muenster cheese; thinly
-sliced
1 green onions; for garnish

Instructions

1. Heat oven to 350?F. Combine mayonnaise and chipotle in cup. Spread over
cut sides of bread. Cover one half of each loaf with ham, then onion. Top
with cheese. Replace tops of bread.

2. Wrap loaves in foil. (Refrigerate up to 4 hours.) Bake 10 minutes. Cut
into 2-inch pieces; garnish with green onions. Makes about 24 mini
sandwiches.

*Chipotle chiles in adobo are available from Mo'Hotta Mo'Betta
(800-462-3220) and in Hispanic markets.
