Chicken Alfredo and menu advise?!

Chicken Alfredo and menu advise?

I have been given the opportunity to cook the Valentine's Banquet meal at my church on Feb. 9th. I am looking for a Chicken Alfredo recipe for 150. Can anyone help me out? This is my tentitive plan for a menu-- how does it sound to all of you:

Green Salad with Italian Dressing
Chicken Alfredo
Lemon Broccoli
Dinner Rolls (purchased)
Chocolate Cake with Raspberroes (or Chocolate Eclair Cake... still deciding here!)
Coffee, Tea, or Water

if you are on a budget, I wouldn't buy the sauce. Quality sauce will be expensive and you get what you pay for when you go the cheap route. Try to make it yourself, there are alot of good recipes out there if you have the time to research it and it is totally easy to make!! People hear "alfredo sauce" --and it scares them but it is EASY.
Also there are sites out there that will either give you the conversion recipe for large quantities and the best way to cook, hold and heat your pasta. Pasta, when hot will keep cooking and get mushy, you also have to keep them moist or they will become sticky and then hard. If you have time to look up some of this stuff--it doesn't hurt to research!! Menu sounds great--good luck to ya"!!!

I would go with the Chocolate Cake w/ Raspberries.

That sounds very elegant!

If I could make one suggestion, have a choice of dressings for the salad (Italian, Fat-Free Raspberry Vinegarette and Bleu Cheese or Ranch).

The meal sounds wonderfull!! An antipasto platter would be nice with prosciutto and melon roll ups, and toasted olives with boiled baby onions and orange zest, saw that last week on Rachel Ray, [the olive salad] drizzle olive oil over all.

When I make alfredo it is as good as the Olive Garden but I start with RAGU classic alfredo and doctor it up with onion and small amount of garlic powder, pepper, and grated parmesan cheese. This could be a bit too expensive for that many people. The menu sounds great and very classy, sorry I couldn't be of more help.

It is all about cooking for large groups. From what I've read pasta has serious issues when cooking for large groups and these people have done it and know all the tricks! It has all sorts of ideas on portion planning, bulk buying etc. There are also links to people who have had some pretty great experiences cooking for large groups.

Chicken Alfredo with Fettuccini Noodles

18-3/4 pounds fettuccini pasta
28 cups butter, divided
18-3/4 pounds skinless, boneless chicken breast halves - cut into cubes
37 (16 ounce) containers whole milk ricotta cheese
37 cups heavy cream
1/3 cup and 1 tablespoon salt
18-3/4 cups grated Parmesan cheese

Bring a large pot of lightly salted water to a boil. Add fettuccini and cook for 8 to 10 minutes or until al dente; drain.
Melt 2 tablespoons butter in a large skillet over medium heat. Saute chicken until no longer pink and juices run clear.
In a large saucepan combine ricotta cheese, cream, salt, Parmesan cheese and remaining butter. Cook over medium heat until well combined, about 10 minutes. Stir in cooked fettuccini and chicken; cook until heated through.
