Question: Main course: salad dinner ideas!?
In a constant attempt to watch my weight, I basically only eat salads!. I am running out of some ideas for a tasty, crisp, salad!. I always tend to add grilled chicken, but I am looking for something fresh and new for tonite!. If anyone has some ideas, please feel free to let me know!Www@FoodAQ@Com

Some of my favourite salad ingredients (I'm vegetarian by the way, so no chicken or shrimps for me, but you might like it!) are:

Pomegranate seeds
Apple or pear slices
Toasted almonds
Pecans
Avocado
Beansprouts
Arugula
Mandarin segments
Cheese (boconccini, feta, blue, unripened goat's cheese, etc!.)
Baby spinach
Chickpeas
Water chestnuts

You can also look up amazing Asian salads that have things like rice noodles or asian vegetables like beansprouts mentioned above with cool dressings - sesame seeds are a great flavour addition to any dressing! Be adventurous: go to a good fruit & vegetable store if you have one near you and just pick out some new things to add - try different textures, sweet, sour, salty, cold, hot anything to shake things up a little!. Add dried apple chips, dried cranberries or a few nuts (sunflower) to your salad!.

I like trying different types of lettuce or spinach!. Baby Romaine, Mixed field greens, baby spinach, sprouts are good alternatives for lettuce!.
Green leaf red leaf, butter lettuce, boston, bib!.

Beets, dill pickles, capers are also low in calorie and fat free choices!.

Try adding canned tuna or frozen shrimp on your salad!.

I also add difeerent seasonings to my chicken breast-There's a jerk dry rub seasoning that I spread on my chicken before I cook it when I want something different!. Or a lemon pepper seasoning!.

As far as salad dressings I like the fat free sun-dried tomato-ken's,
they also have a raspberry walnut and a rap berry vinaigrette!.Www@FoodAQ@Com

You can top with broiled salmon, shrimp, sliced lean steak, even a couple of sliced boiled eggs will give you the protein you need!. You can mix different vinaigrettes by using different vinegars such as red wine, balsamic, apple cider!. Or add some good dijon mustard, or fresh garlic to the dressing!. You can also add chopped herbs like basil, thyme, cilantro!.Www@FoodAQ@Com

Check out what they're selling at stores and restaurants and duplicate what they have!.

also, whip something up based on what you have at home!. Make the protein and lettuce a small portion and fill it with leftovers from a veggie platter or stir fry, bell peppers, tomatoes, celery, mushrooms, etc!.

You can kick it up with raisins, sunflower seeds, nuts, grapes, oranges, etc!. Use a theme and add the appropriate filling!.

Unless you're using spinach, most greens are basically water with very little nutritional value!. Fill up on the goods stuff and take it easy with the dressings!.

For bottled dressings, pay attention to the serving size!. We do that and don't always need the entire serving of dressing!.Www@FoodAQ@Com

Ok, so you have shredded lettuce, chopped spring onions, cucumber,tomatoes and watercress!. Mix together and arrange on a plate!. Take one fresh tuna steak, add a little olive oil to a hot pan, add tuna steak and sear on both sides for two minutes, meanwhile in a small bowl, mix a little Extra Virgin olive oil with some lime juice, a sprinkle of chilli flakes and some chopped fresh parsley and salt n black pepper, mix well!. When tuna is cooked, lay it on top of the salad then drizzle the chilli dressing all over, serve with granary or wholemeal bread!.!.!.!.!.Mmmm! Try some mixed greens and shallots with a balsamic vinegar and olive oil dressing!. the toppings are sautéed strawberries (in something sweet, like a sweet red wine), and breaded, pan fried pieces of goat's cheese!.

Use the un-aged goat's cheese (the type that comes in a cylinder shape) and cut cookies of the cheese out!. Place them in the freezer for about 30 mins to firm up, then put them through a breading station (flour, egg mix, and breadcrumbs in that order)!. Fry them in a bit of oil at a high temperature to cook the breading and leave the cheese gooey inside!.

Enjoy!


Another good one is a mixed greens salad topped with raspberries, butter sautéed apples, and maple candied walnuts or pecans!. Make the dressing by pureeing pecans, olive oil and honey until it taste the way you like it!.

Finally, another classic is a mixed greens salad with frisé, cooked beets, crumbled goat's cheese, candied walnuts, and rasperry dressing!.Www@FoodAQ@Com

Grilled salmon is fantastic on a salad - and very healthful! It's excellent with a raspberry vinaigrette dressing!. I happen to have a grilled salmon recipe on my blog right now -
