most important is to consider her favorite food!. then what you the most comfortable cooking!. Nothing messy(spagetti) nothing too big or filling(steak)!. No garlic or onions!.( the breath thing)!. Find out what she likes!. A nice salad may be enough if you add some chicken or fish to it!. Maybe before you could steam an artichoke or have some veggies, cheese, crackers, grapes, and nuts!. It is light, fun, and she can pick at what she likes and avoid what she doesn't!. Make some crustini's!. French bread sliced with tomatoes, mozzerella, and basil!.!.!.!.or tomato sauce!. what ever you like on top and do it cold or melted in the oven!. wrap turkey and cream cheese around steamed asparagus with a pinch of pepper!. If you have a variety of snacks then you can call it Tapas and its fancy, easy, impressive!. also try zucchini sticks with cocktail sauce instead of shrimp!. Its lighter, different and no fishy taste!. cocktail sauce is ketchup,lemon juice,worchestire sauce, and horseradish!. Desert should be light too!. fresh berries with a drizzle of chocolate sauce and whip cream!. strawberry shortcake!. mini rootbeer floats are always fun!.Www@FoodAQ@Com
I always like baking lasagna for my boyfriend which is simply going to the grocery store and picking out lasagna noodles and buying whatever the ingredients are on the package!. That with garlic bread it to die for!. To keep it simpler than that, you could always try something like roasted chicken breasts in a pan with some sauteed vegetables on top like chopped carrots, zuccini, tomato, and spinich!? Then have a side of boiled rice!.
Dessert you could try baking cupcakes from a cakemix box or something more challenging like cheesecake which is easy to make but involves more!.

Individual Beef Wellingtons
5 ounces fresh mushrooms, sliced
2 tablespoons and 2 teaspoons chopped onion
2 tablespoons and 2 teaspoons dry sherry
1 tablespoon and 1 teaspoon butter
1 tablespoon and 1 teaspoon chopped parsley
2 (8 ounce) fillets beef tenderloin
1/3 (17!.5 ounce) package frozen puff pastry, thawed
In a large skillet over medium heat, combine the mushrooms, onion, sherry, butter or margarine and parsley and saute until all the liquid is absorbed and the mixture resembles a paste!. Cover the top of each steak with the mixture!.
Partially thaw the puff pastry sheets and roll out pieces thin enough to cover the top, sides and bottom of each steak!. Place the steaks on a baking sheet, cover with plastic wrap and store in the refrigerator until serving time!.
Preheat oven to 425 degrees F (220 degrees C)!.
Bake steaks uncovered in the preheated oven for 25 minutes!. (Note: They will be rare but will continue cooking while dish is sitting!.)
Serve with:
Twice Baked Potatoes
4 large baking potatoes
4 tablespoons milk
salt to taste
2 tablespoons butter
1/4 cup shredded mild Cheddar cheese
Preheat oven to 350 degrees F (175 degrees C)!.
Clean and scrub baking potatoes!. Pierce skin with a fork once or twice!. Bake at 350 degrees F (175 degrees C) for approximately 1 hour or until the potatoes are soft and firm!.
Let potatoes cool slightly!. Cut baked potatoes in half and scoop out pulp within 1/4 inch of the shell edge!. Mash the pulp with milk, salt and butter to taste!. Stuff shells with mashed pulp mixture sprinkle tops with grated cheddar cheese!. Place potatoes on a baking sheet and bake at 350 degrees F (175 degrees C) for 15 minutes or until cheese is melted and bubbly!.
And:
Sauteed Spinach
1 tablespoon extra-virgin olive oil
1 (10 ounce) bag spinach leaves
1 1/2 teaspoons garlic salt
1/4 cup grated Parmesan cheese
Heat the olive oil in a large skillet over medium heat!. Add the spinach to the skillet and cover; allow to cook 5 minutes!. Stir in the garlic salt and cover again for another 5 minutes; remove from heat!. Sprinkle with Parmesan cheese to serve!.

Chocolate Mousse
1 (3!.9 ounce) package instant chocolate pudding mix
1 1/2 cups milk
1 (16 ounce) container frozen whipped topping, thawed
Prepare the pudding in a large bowl using 1 1/2 cups milk instead of the suggested 2 cups!.
Fold in the whipped topping until blended!. Refrigerate until chilled and serve!.
