- Cannolis are very elegant!. You may be able to get the shells from a local bakery so call around!. This would also make it much easier for 80 people yet be very elegant!.

You can make Tiramisu!. That is easy to make for a large quantity of people!. You can either serve it in big dishes and allow people to scoop themselves or you can buy plastic martini glasses and serve it in those!.

My favorite thing to make when I am trying to impress is a vanilla cake with berries and mascarpone!. This is absolutely delicious and the berries make it look beautiful!. Just make some vanilla sheet cakes and let them cool!. Then take the mascarpone and thin it out with some heavy cream!. Add sugar and vanilla extract to taske!. then cut up strawberries and lay them on the first sheet cake!. Put a layer of mascarpone!. Put the next sheet cake on top of them!. Layer the mascarpone and then put strawberries, rasberries, blackberries, and blueberries on top!. You can make a beautiful design or just put the berries on randomly!.

I would say don't scoff at cupcakes!. There are fancy ones you can make!. Plus at these "classy" "sophisticated" events the trend is to have bite sized desserts!. I would suggest!.!. mini carrot cupcakes with cream cheese frosting, mini red velvet cupcakes with cream cheese frosting, mini yellow cupcakes with chocolate frosting!. (to make the chocolate ones look more fancy I would shave some white chocolate on top of the frosting) Mini cheesecakes, mini fruit tartes, chocolate covered strawberries!.

Good luck!. 80 people is a lot!.

This is a 6 serving Tiramisu recipe
Ingredients
*6 egg yolks
3 tablespoons sugar
1 pound mascarpone cheese
1 1/2 cups strong espresso, cooled
2 teaspoons dark rum
24 packaged ladyfingers
1/2 cup bittersweet chocolate shavings, for garnish
Directions
In a large bowl, using an electric mixer with whisk attachment, beat egg yolks and sugar until thick and pale, about 5 minutes!. Add mascarpone cheese and beat until smooth!. Add 1 tablespoon of espresso and mix until thoroughly combined!.

In a small shallow dish, add remaining espresso and rum!. Dip each ladyfinger into espresso for only 5 seconds!. Letting the ladyfingers soak too long will cause them to fall apart!. Place the soaked ladyfinger on the bottom of a 13 by 9 inch baking dish, breaking them in half if necessary in order to fit the bottom!.

Spread evenly 1/2 of the mascarpone mixture over the ladyfingers!. Arrange another layer of soaked ladyfingers and top with remaining mascarpone mixture!.

Cover tiramisu with plastic wrap and refrigerate for at least 2 hours, up to 8 hours!.

Before serving, sprinkle with chocolate shavings!.

Individual Orange and Chocolate cheesecakes

Ingredients
1/3 cup finely crushed chocolate wafers
2 tablespoons butter, melted
1/4 cup ricotta cheese
2 ounces cream cheese
1/4 cup sugar, plus 2 tablespoons
1 orange, zested
1 egg
Butter, for greasing
Directions
Special equipment: mini muffin tin

Preheat the oven to 350 degrees F!.

Combine the crushed chocolate wafers and the melted butter!. Place a tightly packed teaspoon of the wafer mixture into each mini-muffin cup and press down firmly!.

In a food processor combine the ricotta cheese, cream cheese, 1/4 cup of the sugar, half of the orange zest, and the egg!. Blend until smooth!. Lightly grease the sides of the mini muffin tin with butter!. Fill the cups with about 1 1/2 tablespoons of the cheesecake mixture!. Place the mini muffin tin in a baking dish and pour enough hot water in the baking dish to come halfway up the sides of the mini muffin tin!. Bake for 25 minutes!. Transfer the mini muffin tin to a wire rack and let cool for 30 minutes!. Refrigerate for 15 minutes!. Use a small knife to gently pop the cheesecakes out of the cups!.

Just before serving, combine the remaining orange zest with the remaining 2 tablespoons of sugar!. Top each individual cheesecake with about 1/4 teaspoon of the orange zest mixture and serve!.

Mini Key lime Tarts

Ingredients
24 Key Lime Cooler cookies
8 ounces cream cheese, softened
1 egg
1/2 cup sugar
2 tablespoons lime juice, preferably Key lime
1 teaspoon lime zest
Fresh sweetened whipped cream
Mint leaves or lime zest, for garnish
Directions
Preheat oven to 350 degrees F!.

Fill 2 (12-muffin) mini muffin tins with paper cups and spray cups with cooking spray!. Place 1 Key Lime Cooler cookie in the bottom of the cup, flat side down!.

Prepare filling!. Beat together cream cheese, egg, sugar, lime juice, and zest until well mixed!. Fill the cups to the top!. Bake for 10 to 12 minutes!. Remove tarts to cool!. When completely cool, fit a star tip in a pastry bag and fill with the whipped cream!. Pipe the whipped cream on top of the tarts!. Garnish with tiny mint leaves or lime zest!.Www@FoodAQ@Com

Chocolate fondue or fountains!. Serve with angel food cake, fruit, marshmallows, cheesecake, and the likes!.
also the idea of mini cupcakes is great!. Rachel Ray once published a recipe in her magazine for red wine and chocolate cupcakes with mascarpone cheese frosting that where to die for (I made them for my hubby's B-day)!. You could make cheesecakes and top with different things (strawberries, chocolate and caramel, blueberries, raspberries, et cetera, et cetera, and cut them into bite size portions you could have a hit!. But I do think that one thing you should really think about is trying to find something that you can make ahead of time and that is pretty much hassle free to serve!.
