I hate cooking, and also hate recipes that require a million ingredients and hours of preperation and cooking time!.
Mum gave me this book for Christmas,

http://www!.4ingredients!.com!.au/cat/index!.!.!.

and I tell you, I NEARLY enjoy cooking now! Its an amazing book, and the recipes are so easy and so far, tasty too! I was so impressed I went out and bought the other edition too!
Check it out, its awesome!!Www@FoodAQ@Com

Our menu is based on what's in season and what's on sale!. (and also what has been stockpiled in the pantry)

How about meatballs!?

I know this sounds like a lot of work but it makes about 16 meatballs and they have this complex, fantastic taste!. These freeze and thaw beautifully, although they rarely stay in my freezer more than 2 weeks!. If you like, add beef bullion cubes to the milk and skip the liquid beef broth!.

Delicious with cooked pasta or as a meatball sandwich!.

1 LB ground turkey or ground meat of your choice
? cup unseasoned dry bread crumbs
? cup Romano or Parmesan cheese, finely grated
? cup whole milk
? cup low-sodium beef broth
? cup chopped fresh parsley
1 egg, beaten
1 teaspoon dried oregano
2 teaspoons garlic, minced
2 teaspoons kosher salt
2 teaspoons ground black pepper
1 teaspoon dried basil
? teaspoon dried pepper flakes
Pinch nutmeg

Yield: about 16 golf-ball sized meatballs

Combine all ingredients and stir thoroughly with a fork!.
Bake at 425F for 25 minutes or fry as desired!.

To freeze: place meatballs on cookie sheet, 1 inch apart and freeze one hour!. Pop the frozen meatballs off the tray and place in a zipper-type baggie!. Roll up and return to freezer!. To use, bake from frozen at 425F for 30 minutes!.Www@FoodAQ@Com

Yes, indeed! I like to try new recipes every now and again, but for the most part I'll make an oven baked chicken on Monday and use the leftovers for various recipes throughout the week!. It's just the two of us, so one chicken gets us 3 or 4 meals!. also, whole chickens sell for under $!.99/lb, so it's a very affordable meal-starter!.

Some of our favorite meals:
1!. Chicken quesadillas
2!. Chicken enchiladas (these are the best I've ever had: http://www!.bettycrocker!.com/recipes/reci!.!.!.
3!. Chicken salad for lunches
4!. Pesto pita pizzas (diced chicken breast on top of pita bread with pesto sauce, feta, sliced tomatoes, garlic, basil, cracked black pepper)
5!. Curried chicken over brown rice or couscous

I also mix up these recipes with things like ham and potato casserole, chili dogs, hamburgers made on a George Foreman grill, Frito pies, creamy potato soup in bread bowls, lasagna (don't cook the noodles beforehand - add more sauce and let it cook longer in the oven and you'll avoid the whole mess), tomato soup and grilled cheese sandwiches, and whole wheat pesto pasta with sun-dried tomatoes, shrimp, and broccoli!.

I hope you guys like chicken! We certainly do!.

funny you ask that question!. I just got "yelled" at for always making chicken!. I really do!. You can always make something with chicken!. my best recipe is for split breast chickens!. I stuff them - under the skin - with a cheese blend ricotta, mozzarella, and Parmesan with whatever herbs i have handy and I add an egg for binding purposes!. then just bake them in the oven until they are done!. nothing fancy and doesn't take a lot of prep either and good!.
you've got a house full right!? try some chili, lasagna, meatloaf ( i love meatloaf! I make the best!. secrete ingredient - a1 sauce!. mmmmm)
even fish is pretty easy - a little butter or olive oil and some lemon (and/or lemon pepper) bake in the oven or saute on the stove top
hope that helps!Www@FoodAQ@Com
