Pumpkin, Pear & Spinach Bake?
Late night phone call to a sister-in-law, I am sure left out some details for this delicious addition to Roast Pork!
Bake pumpkin, poach pears in white wine, add juices from both including the pan juices from the roasting pork, add vinegar, white wine, brown sugar and reduce juices over approx 20 mins. Meanwhile layer pumpkin and pears in a dish to bake and top with lightly cooked (English) spinach.
Drizzle/pour reduced juices and bake 20 - 4o mins.
I am certain there is something missing! This tasted delicious as is however, I sense there is something missed. Would appreciate any thoughts, ideas or hints. Perhaps you have cooked this also?

This may be putting me out on a limb but why not call your sister-in-law and ask her? Or better yet - try your own add-ins and see if you can improve on her recipe if nothing is missing. Just a thought.
