Bakewell Tart is an easy one to do in bulk, will hold well so easy transported and easy to serve with just cream though if you really want custard you can buy sachets of instant custard and boil the kettle!. (Make up in batches and put into thermos flasks till required!)
Make up bakewell tart in either rectangler ceramic "roaster dishes" that you can buy in supermarket (the type I would bake a lasagne in) or in your oven roasting trays!.
A ceramic dish of 9" x 12!.5" will make 18 medium sized portions!.

Pastry made from 8oz block marg,8oz Self raising flour, 8oz Plain flour pinch of salt and water to bind!.
Make your pastry reasonably "short" by not adding too much water so once cooked it will have a crumbly texture!.
Line the dish and crimp top edge!.
Using good Raspberry jam spread the pastry bottom a reasonable thickness (like what you would put on toast) but not a big pool of jam as it would bubble up through the sponge!.
In a bowl mix 4oz SR Flour, 2oz ground almonds, 1 tsp Baking powder, 6oz castor sugar, 6oz of soft margarine (stork or flora is good but never light versions)and 2 large eggs and some milk to make a cake mix that still holds shape!.Keep beating the mix until it changes colour to a noticeable lighter shade!. Spread over the jam coated pastry case!. It should be not too thick!. You can use pastry trimmings (if you have any) to do a crisscross pattern on top And/or (for ease) just spinkle the top with flaked almonds!.
Bake at 160'C (fan oven) for about 35mins till golden and cooked!. (adjust to your oven)!. When taking out of the oven sprinkle with some castor sugar whilst still hot!. Allow to cool a bit!.
To portion up a triangle always looks more than a square of equivalent and presents better so what we do is divide the tart firstly cutting it 3x3 as in make two cuts length ways and two cuts width ways to make 9 equal sized rectangles, then cut each rectangle with a diagonal cut to make the triangle!.Www@FoodAQ@Com

The dollar store near me has plastic wine/martini glasses (10 or so in a bag I believe) get 60 of those and display your trifle in them!. Id get some fresh strawberries and cut them in half and have 2 strawberries per container!. use them against the glass so people can see what they're going to be eating!. its nice for a display, its very cheap!.Www@FoodAQ@Com
