Easy casseroles for after funeral dinner?

My husband and I have an unexpected funeral to attend tomorrow and i am looking for a few casserole recipes that would be easy to make and easy to take with us. i dont want to have to buy a bunch of ingredients tonight. thanks for your help!

Cheesy hash browns (can be made in crockpot, but start it early)

32 oz bag frozen hash browns, 16 oz container sour cream, 2 cans cream of mushroom soup, 3 cups shredded cheddar. Mix together and bake at 400 for 40 minutes, or til bubbly & browned.

Greenbean casserole. Quick, easy, inexpensive, and comforting. I'm sorry for you loss. I think that after a funeral or any traumatic incident, food really helps.

Sorry about the death. That always sucks. Here is a recipe for chicken casserole. It has very few ingredients.

4 bone in chicken breasts-boiled and shredded
16 oz sour cream
14 oz can cream of chicken soup
14 oz can cream of musroom soup
salt and pepper to taste
2 sleeves crushed ritz crackers
melted butter to drizzle on crackers

Mix everything together but the crackers and butter. Pour mix into 9 x 13 dish. Spread crushed crackers on top. Drizzle with butter. Bake at 350* for 30 minutes or until golden and bubbly. This casserole is also really good if you sprinkle poppy seeds on after you pour the butter. Hope you like it.

Cheesy Olive appetizers

These became popular in the '60's and are still good today. Bet you can't eat just one! Prep time includes 20 minutes of flash freezing.

55 min 40 min prep
2 cups grated cheddar cheese
1/2 cup soft butter
1 cup unsifted all-purpose flour
1/2 teaspoon salt
1/2 teaspoon paprika
1 jar stuffed green olives

1. Mix together all the ingredients except the olives.
2. It will be a thick mixture.
3. Drain at least 48 stuffed green olives.
4. Wrap approximately 1 teaspoon of the cheese mixture around each olive, to completely cover it.
5. Flash freeze covered olives at least 20 minutes.
6. Store in a freezer bag until ready to serve.
7. Bake on an ungreased cookie sheet at 400F for about 15 minutes.

Well I have found that people really enjoy "comfort" food at funerals. So some macaroni and cheese is always welcomed. Here is my basic macaroni and cheese recipe. You can basically substitute almost any kind of cheese but the velveeta adds a smoothness to the dish that is usually appealing to people. It also satisfies people who are vegetarian. It transports well since it's not overly runny or sloppy either.

Macaroni & Cheese

1 lb dried macaroni, prepared according to package instructions
1 lb velveeta, broken into large cubes
1 cup milk
1/2 tsp mustard
1-2 slices of swiss cheese or 1/2-1 cup shredded cheddar or 1/4 cup shredded parmesan, or just about any other cheese you like

Cook macaroni in boiling salted water according to package directions.

Place remaining ingredients in microwave safe 1 qt. bowl and microwave stirring often until the mixture is smoothly melted. Pour on macaroni and put in a covered casserole dish.

*** I often use this recipe to clear up various leftover cheeses I have hanging around in the refridgerator. The more the merrier!

Sweet Potato Casserole
INGREDIENTS
4 1/2 cups cooked and mashed sweet potatoes
1/2 cup butter, melted
1/3 cup milk
1 cup white sugar
1/2 teaspoon vanilla extract
2 eggs, beaten
1 cup light brown sugar
1/2 cup all-purpose flour
1/3 cup butter
1 cup chopped pecans

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
In a large bowl, mix together mashed sweet potatoes, 1/2 cup butter, milk, sugar, vanilla extract, and eggs. Spread sweet potato mixture into the prepared baking dish. In a small bowl, mix together brown sugar and flour. Cut in 1/3 cup butter until mixture is crumbly, then stir in pecans. Sprinkle pecan mixture over the sweet potatoes.
Bake for 25 minutes in the preheated oven, or until golden brown.

Quick and Easy Lasagna

1 24- or 26-ounce jar pasta sauce
1 18-24-ounce refrigerated large cheese ravioli
1 10-ounce box frozen chopped spinach, thawed and excess water squeezed dry
1 8-ounce bag shredded mozzarella
1/2 cup (2 ounces) grated Parmesan

Heat oven to 350° F.

Spoon a thin layer of sauce over the bottom of a 9-by-9-inch or 11-by-7-inch 2-quart baking dish. Cover with a single layer of ravioli. Top with half the spinach, half the mozzarella, and a third of the sauce. Repeat with another layer of ravioli and the remaining spinach, mozzarella, and half the remaining sauce. Sprinkle with the Parmesan. Cover with foil and bake for 25 minutes. Uncover and bake until bubbly, 5 to 10 minutes more.

bag tator tots, family size can cream of mushroom soup, 11/2 lb hamburger, 1 can french style green beans..chees (any kind, flavor)
brown the ham. drain
mix together hamburger soup green beans top w/ chees )shredded or sliced doesnt matter) top w/ tots single layer in rows cook as according to tot directions...really simple
if you would rather take something you dont have to cook heres a nice recipe,,1 thing cool-whip,1 thing cream chees about 3 snicker bars chopped, about a lp of grapes and 2-3 apples diced up you can mix it up a little too if you wanna add nuts or use french vanilla cool whip you could add strawberries

I know this is going to sound a little far fetched, but we had to go to a house after the funeral a while back and this is what we did. We KNEW that there would be lots of dishes being brought, so we purchased frozen items, Lasagna, Vegis, Rolls, Pies -- whatever, that way in a week or so, they will still have plenty of 'quick' foods to prepare. We received a beautiful thank you note saying how much they appreciated the thought of taking care of them further down the road.

I am sorry for your loss. Most folks take casseroles to a wake, so why not opt for a dessert instead? Here's one that I have made for lots of occasions, including a funeral luncheon and actually was asked by the family to make it again for when other relatives arrived.

Banana Cake:

1 pkg yellow cake mix with pudding
1 pkg glazed walnuts
2 -3 very ripe bananas
Cream cheese glaze

Mix cake mix according to the directions and add mashed bananas. Place have of the mixture in prepared bundt pan and sprinkle with walnuts. Top with remaining mix and bake until golden and top springs back (use cake mix directions). Remove from oven and cool for 15 minutes. Turn out on your cake plate and let cool completely. In the meantime, mix 3 T softened cream cheese with 1/4 cup softened butter, 1 T vanilla, 3 T milk and 1 cup powdered sugar. Add milk until mixture is thinned enough to make a glaze. Spoon liberally over cake and let run down the sides. Top with remaining walnuts.

CREAMY FOUR CHEESE MACARONI

Non-stick cooking spray
Salt
3 cups elbow macaroni
1/3 cup all-purpose flour
2 1/3 cups 1 percent milk
3/4 cup shredded Fontina cheese
1/2 cup Parmesan
1/2 cup shredded non-fat cheddar
4 ounces processed light American cheese (recommended: Velveeta Light)
1/2 cup Japanese (panko) bread crumbs
Preheat oven to 375 degrees F.
Spray a 2-quart casserole dish with non-stick cooking spray and set aside. Bring a large pot of water to the boil. Salt water, add macaroni, and cook until al dente. Drain into a colander, run under cold water to stop the cooking, and then set aside.


While pasta is cooking, combine flour and milk in a large saucepan, whisking until blended. Cook over medium heat until thick, about 10 minutes, stirring constantly. Add cheeses and cook until melted and thickened. Remove from heat and stir in the macaroni and 1/4 teaspoon salt. Pour mixture into prepared casserole dish. Sprinkle bread crumbs over top. Bake until bubbly, about 30 to 40 minutes.

Corn Casserole

INGREDIENTS
1 cup margarine, melted
2 (15.25 ounce) cans creamed corn
2 eggs, beaten
1 (8 ounce) package dry corn bread mix
1 onion, finely chopped
salt and pepper to taste
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
Melt margarine in a 9x13 inch baking dish. Add corn, eggs, corn bread mix, onion, salt and pepper and mix well.
Cover dish with aluminum foil and bake in preheated oven for about 40 minutes, or until firm.
