Question: Easter dinner to serve 8 people!? Menu ideas!?
I am in charge of Easter this year and don't know what to cook for my new in laws!. I was thinking lamb chops, but some people don't like lamb, and I don't know if they do!.I've only had lamb on Easter, so I don't know what to make!. Any ideas would be appriciated
also- I will be cooking for three children as well as the adults!.Www@FoodAQ@Com

Orange Glazed Ham
1 boneless canned or fully cooked smoked ham, about 4 pounds
1 jar (10 ounces) orange marmalade
1/2 cup orange juice
1 tablespoon prepared mustard
1/4 teaspoon ground cloves
1/4 teaspoon ground ginger
1/2 cup raisins
Preparation:
Place ham on a rack in roasting pan, fat side up; score fat!. Bake at 325° for 1 hour and 15 minutes!. In a saucepan over low heat combine marmalade, orange juice, mustard, cloves, and ginger!. Simmer for 5 minutes!. Spoon half of the orange mixture over the ham; continue baking for 30 minutes!. Add raisins to the remaining orange mixture and serve with ham!.
Serves 10 to 12

Whole Baked Sweet Potatoes
(double this one)
4 medium sweet potatoes, even in size
vegetable oil
butter
salt and paprika or cinnamon sugar
Preparation:
Scrub sweet potatoes; brush each with vegetable oil!. Arrange potatoes on oven rack and bake at 450° for 35 to 45 minutes, until tender!. Remove at once and prick with a fork to let steam out!. Cut a 1 1/2-inch cross in the center of each potato!. Hold each potato with pot holder and press upwards until filling "bursts" up through the cuts!.
Top with butter and sprinkle with salt and paprika or a mixture of cinnamon and sugar!.
Serves 4!.

Fresh Green Beans Parmesan
2 to 3 pounds fresh green beans, trimmed and cut
water to cover, about 3 to 4 cups
1 cup sliced fresh mushrooms
1/3 cup chopped onion
1 can (8oz) sliced water chestnuts, drained
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon basil
1 teaspoon dried Italian seasoning
1/3 cup olive oil
1/4 cup grated Parmesan cheese
Preparation:
Combine green beans and water in Dutch oven!. Bring to a boil!. Cover, reduce heat, and simmer for about 8 t o 10 minutes until tender but still a bit crisp!. Drain!. Plunge into ice water to stop the cooking process!. Drain beans and set aside!. Combine mushrooms, onion, water chestnuts, salt, pepper, basil, and Italian seasoning and oil in a Dutch oven; sauté until onion is tender!. Stir in beans and cook until thoroughly heated!. Sprinkle with Parmesan cheese!.
Serves 6 to 8!.

Cornmeal Biscuits
1 1/2 cups all-purpose flour, sift before measuring
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup yellow cornmeal
1/3 cup shortening
2/3 cup milk
Preparation:
Into a mixing bowl, sift together the flour, baking powder, and salt!. Stir in cornmeal!. Cut in shortening until mixture resembles coarse meal!. Add milk; stir just until dry ingredients are moistened!. Knead about 20 times on a floured surface!. Roll out about 3/4 inch thick then cut with a 2-inch biscuit cutter!. Place on baking sheet!. Bake at 450° for 15 minutes!.
Makes 12 cornmeal biscuits!.

Cheddar Corn Casserole
4 ounces melted butter
1 large onion, chopped
1 small green bell pepper, chopped
1 small red bell pepper, chopped
3 eggs
1 cup sour cream
1 can (about 15 ounces) cream-style corn
1/3 cup yellow cornmeal
1/4 teaspoon salt
1/4 teaspoon pepper
1 cup shredded Cheddar cheese, or Pepper Jack
Preparation:
In a medium skillet, heat 2 tablespoons of butter over medium heat!. Add onion and peppers and cook until tender, stirring occasionally!. Remove from heat!.
Combine remaining 6 tablespoons butter, eggs, and sour cream in a large bowl!. Whisk together until smooth!. Mix in corn, cornmeal, salt and pepper!. Stir in cheese and the onion-pepper mixture!.

Turn into a 2-quart buttered casserole!. Bake in a preheated 350° oven for 30 to 35 minutes, until puffed and golden!.
Serves 8!.

Coffeecake
1/4 cup water
1 package dry yeast
1-1/2 cups milk
1/4 cup shortening
1/4 cup sugar
3/4 teaspoon salt
1 egg
3/4 teaspoon lemon extract
1/4 teaspoon nutmeg
3 cups flour
1/3 cup sugar
1-1/2 teaspoons cinnamon
3 tablespoons butter, melted
Preparation:
Dissolve yeast in water in a small bowl!. In small saucepan, place 1/4 cup milk and add shortening, 1/4 cup sugar, and salt!. Heat over medium heat until shortening melts!. Remove from heat and pour into large mixer bowl
Add rest of cold milk to mixer bowl and mix well!. Then add yeast mixture and mix well!. In small bowl, beat egg until foamy and add lemon extract and nutmeg!. Add to milk mixture in bowl!.

Gradually add enough flour until a soft dough forms!. Turn dough out onto floured surface and knead in enough remaining flour until dough is satiny and smooth!. Place dough in greased bowl, turning to grease top!. Cover and let stand until double in bulk, about 1 hour!.

Punch down dough and shape each half into an 8" round!. Place each into a greased 8" round cake pan!.

Cover and let rise until doubled, about 30-45 minutes!. Using fingers or the point of a rounded knife, dimple the surface of the dough about 25 times!. In small bowl combine 1/3 cup sugar and cinnamon and mix well!. Brush melted butter over both coffeecakes and sprinkle with cinnamon sugar!. Bake at 350 degrees F for 23-28 minutes or until coffeecakes are golden brown!. Remove from pans and cool on wire racks!.Www@FoodAQ@Com

if you like lamb why don't you serve baby lamb chops for an appetizer along with one other appetizer,then serve spiral ham, or a roast beef!.sides could be a spring salad with baby lettuces spring peas and asparagus with a lemony dressing!. boiled new potatos with butter and chives for you veggie any great spring vegetable!. this will keep your easter dinner fairly light and full of spring!. for dessert try a store bought angel food cake with fresh fruit!. happy easterWww@FoodAQ@Com

Turkey ;, Slow oven cooked is best

A big ham has always been my family tradition!. That'll feed everyone!. And a big bowl of garlic cream cheese mashed potatoes, green bean casserole, stuffing/dressing on the side, and this year I'm adding corn on the cob!. And a salad if we have room!.Www@FoodAQ@Com
