What would be a great meal to cook for my boyfriend?
I'm a good cook, and I think I could handle anything you threw at me, so do you have any suggestions, or websites that I could go to? (nothing with beef) Something fun and new.

I would make chicken flautas with sour cream and etc. its good
Cook him chicken marsala. It tastes really good and it's fairly easy to make. Do a google search on Buca di Beppo chicken marsala recipe for the instructions. You won't be dissappointed.
Whatever his favourite is. Or if you want to try "something fun and new", you can always do MY favourites! lol Sheppard's Pie (ground beef, not chicken), or anything salmon.
how about shrimp soup, its my sweeties favorite.
boil water.
about half pound raw shrimp/peeled deveined and split for butterfly effect.
very petite small carrots about10-15 ( if small then cut in half)
half onion.(chopped small)
2potatoes/ cubed small
noodles/ which ever you prefer, though egg noodles are best i think the shorter the better.
seasoning/salt/pepper
boil potatoes and carrots.
add seasoning.
while doing this fry onion(maybe alittle grated carrot too)
when onion is lightly brown toss into soup
check if potatoes are soft, if yes then scoop in the shrimp boil for about 2 min. and add the noodles. boil until noodles are tender. make sure there is more water than noodles so that it does not seem like your making mashed potatoes.
do not put cooked shrimp into soup, that is a bad mistake, your soup will taste fishy and wont be fresh next day either.
also a similar favorite is clam chowder, have u tried to make that? its awesome he'll love you for it!
Might I suggest you cook him a beer can chicken with mashed taters and carrots and peas with some good gravy and couple of rolls or garlic bread( I now I am the only one who likes garlic bread with chicken).For desert make a banana pudding.In case you have no idea what a beer can chicken is let me explain. You take a can of beer( I use a coke can with orange juice instead of beer) open it and dump out one quarter of it into a ten inch cast iron skillet. Now set the can in the middle of the skillet and slowly push the chicken down on the beer can. Once it is on spread the legs out so that is stands like a tripod. Now take some salt , pepper and Spanish smoked paprika ( equal amounts of all three) and rub it all over the chicken. Now comes the tricky part take a couple of toothpicks and stick one into each thigh sticking out so that the other end goes into the wing tip.This will hold the wings out so that whole chicken browns evenly.Now take another toothpick and pull the skin on the back up over the opening in the neck and pin it up so that the moisture will not rise up out of the chicken. Add a half a cup of water to the bottom of the skillet with the beer.Place in a 500 degree oven after 15 minutes turn down the oven to 350 degrees and cook till done. About an hour total give or take a couple of minutes.
Find out what he likes, and cook it. But guys do luv steak, and they do love pasta in tomato sauce.
I would fix some homemade fries or onion rings for the steak.Maybe a lasagna, or ravioli with red sauce and garlic bread.
Wow him with a gooey chocolate dessert, I like the sound of a chocolate brownie with ice cream, then fudge sauce. Or 'Nilla nanner puddin' sounds good, too.

SMOKED GOUDA-SPINACH STUFFED CHICKEN
4 bone-in, skin-on chicken breast halves - 2? to 3 pounds total Cooking spray
Smoked Gouda-Spinach Stuffing - recipe follows
? teaspoon salt
? teaspoon pepper
2 teaspoons margarine or butter, melted
If the chicken is frozen, place it in the refrigerator the night before you plan to use it or for at least 12 hours until thawed.
Heat the oven to 375 degrees. Spray a 9-inch-square pan with cooking spray.
Make the Smoked Gouda-Spinach Stuffing (see recipe below)
Rinse the chicken under cold water, and pat dry with paper towels. (REMOVE CHICKEN FROM BONE) Loosen the skin from the chicken breasts by inserting fingers between the skin and flesh. Gently separate in center, leaving the skin attached at ends. Spread one-fourth of the stuffing evenly between meat and skin of each chicken breast, using your fingers. Smooth skin over breasts, tucking under loose areas. Place chicken, skin side up, in the sprayed pan. Sprinkle the salt and pepper evenly over chicken. Drizzle with the margarine. Bake uncovered 45 to 55 minutes or until juice of chicken is no longer pink when you cut into the center of the thickest pieces.
SMOKED GOUDA-SPINACH STUFFING
1 package - 10 ounces - frozen chopped spinach, thawed
? cup shredded smoked Gouda or Swiss cheese - 2 ounces
? teaspoon ground nutmeg
Drain the thawed spinach in a strainer, then squeeze out the excess moisture from the spinach, using paper towels or a clean kitchen towel, until the spinach is dry. Place in medium bowl. Add the cheese and nutmeg. Mix all ingredients thoroughly.
Tip: You also can make this recipe with boneless, skinless chicken breast halves. Instead of spreading stuffing between meat and skin of chicken, cut a horizontal slit through the thickest part of each chicken breast to make a pocket. Spoon about 2 tablespoons of the stuffing into each pocket.
Makes four servings.
Nutrition information per serving: 225 calories, 10 grams fat, 5 grams saturated fat, 90 milligrams cholesterol, 550 milligrams sodium, 3 grams carbohydrates, 1 gram dietary fiber, 32 grams protein.
