Pasta is the best side for Chicken Parm. Salad, bread sticks and wine.
Tiramisu goes perfectly with italian fare.

With Chicken Parmesan, I'd certainly offer pasta and a big green salad, maybe w/ artichoke hearts and hearts ofpalm in it. (get it? hearts?!) Garlic bread would be good, too. For dessert, make molten chocolate lava cakes.

MOLTEN CHOCOLATE LAVA CAKES

? C. butter, unsalted
4 oz. bittersweet chocolate
2 eggs
2 egg yolks
? C. sugar
2 Tbsp. all-purpose flour

Butter and flour custard cups or specialty molds. Preheat oven to 450oF. Melt the butter and chocolate, but do not let it boil. Remove from heat and set aside. Beat together the 2 eggs plus 2 yolks and the sugar, until it's light and thick... about 5 minutes. Pour the now tepid chocolate mixture into the egg mixture, and beat to mix. Quickly beat in the flour until just mixed in. Pour into the custard cups. (At this point you can refrigerate for up to 24 hours. If you refrigerate, let return to room temp before you bake.) Put custard cups on a baking sheet and bake at 450oF for 6-7 minutes. The outside will be set up, but the top may still be slightly wiggly. Invert on plate, let sit for 10 seconds or so, remove custard cup. Sprinkle with powdered sugar, and surround with a raspberry sauce or add a scoop of ice cream or real whipped cream on the side. SERVES 4.

when I do veal or chicken parm, i serve it over a bed of hot pasta with a side salad and cheesy garlic bread.
For dessert how about a cannoli cream pie
Cannoli Cream Pie

1 pkg. vanilla instant pudding mix
1 8 oz cream cheese, softened
2 cups milk
1 pint whipping cream, whipped
1/2 tsp. almond extract
2 oz almonds, toasted
4 oz chocolate chips
2 oz cherries
2 pie shells, baked

Blend pudding with milk, cream cheese and almond extract. Add almonds, chips, and cherries.

Divide into pie shells. Top with whipped cream. Garnish with chips.

or simply buy some fresh cannolies

Green beans and tomatoes with herbs - and saute potatoes.

Desert Chocolate cheesecake or chocolate mousse. Decorate the top of either with grated white chocolate shaped into a heart to contrast with the brown chocolate.of the desert.
