Apple of Love with Smoked Salmon
(my boyfriend loves it !)

- 2 red apples
- 2 slices of smoked salmon
- honey
- lemon juice
- butter
- dill (or any other herb you like : chives, chervil...) and cranberries (for decoration)
- pepper

Cut the top of the apple, and remove the pulp (keep about 1 or 0.5 centimetre near the skin so the apple won't break). Reserve the empty apple.
Remove the apple core and the apple seed, just keep the pulp.

Put some butter in a pan. When it's melted, add the apple pulp and smash it with a fork in the pan to make a purée.
Add some pepper, some lemon juice and some honey, and mix again the apple purée.

Remove the apple from the pan, and reserve it.
It must be cool when you serve it.

When it's cool, put the apple purée in the empty apple.
Cut some thin slices of smoked salmon (about 2 centimetres large) and put the salmon slices on top of the apple in a artistic way.
Add the dill and cranberries on top, and serve.

This Time of year a fresh homemade ceasar salad consisting of romaine hearts, Kents tableside ceasar dressing string parmesan cheese, a few diced tomatoes, a splash of olive oil, a garlic and herb crouton with a few anchovies tossed in. Along with this it would be nice to serve a piece of toasted garlic bread, and to top it off a nice red wine of your choice.

Chocolate covered bananas! Mmmmmmm! You can certainly make it romantic, hint hint! ;-)

Appetizer: Oysters

Main course: Grilled tuna served with seasonal vegetables

Dessert: Strawberries and chocolate fondue with a glass of dessert wine

Nachos with all your favourite toppings.

Hummus, couscous with a greek salad. All really easy stuff that is quick.

peanut butter sandwiches

All quick and easy. It's all in the presentation. Make little cut outs or moulds of these things and you have a hit. Heart shaped sandwiches, dips in heart shaped bowls. Make the nachos in the same plate and you share and feed each other. Get it? got it! good. :o)

Go to a Caterer, they'll pack a basket. Go to the beach, great.

Roasting a chicken is super easy. Fill it with onions or apples instead of stuffing. butter and Season the outside and bake.
You can roast some potatoes as the chicken is in its last 45 mins. cut red potatoes into wedges, place in a large bowl, coat with olive oil, season with your favorites (garlic, itialian spices, a little curry) place on cookie sheet and put in with chicken the last 45. Make a nice salad and an easy green veg that you both like. A nice bottle of wine and some flowers and candles. WAHLAH!

Fondue. The main time involved is cutting up the fruit, veggies, and whatever else you would like to serve. The only cooking involved is melting the ingredients on the stove. They have great recipes on allrecipes.com. The three cheese fondue is our fav. cheese, and there are good chocolate ones as well.

Yes, go to a restaurant. It's quick and easy but more expensive

SPICY SHRIMP COCKTAIL
2 lb shrimp, cooked, peeled and deveined. Chilled.
4 med tomatoes, diced
1 bu cilantro, finely chopped
1 fresh jalapeno, diced
2 cloves garlic, crushed
1 onion, diced
1 large avocado, diced.
1 large bottle ketchup
1 jar cocktail sauce, hot or mild
hotsauce, like tabasco or tapatio
6-8 lemons
saltine crackers

In a bowl, add shrimp and squeeze lemon juice from 1 or 2 lemons on it. Put back in fridge.

In a large stock pot, add 4 cups cold water.
Add the entire bottle of ketchup, cocktail sauce, cilantro, jalapeno, garlic, onion, tomatoes. Stir content until completely mixed.

Squeeze 4 lemons into the mix. Add hot sauce to the mix according to taste. If you like it hot, add 6-10 tsp. If you want it mild, add a 3-4 shakes (approx 2 tsp).

In a bowl, Add the tomato mixture into the mug then add a serving of the chilled shrimp and serving of avocado. Serve chilled and with crackers.

To make the cocktail hotter, add more hot sauce.
To make tangier, add more lemon juice and ketchup.

Serves 4-6
