I would argue both - but I'd day with dinner - if you have a salad have water - and then if its chicken/fish serve a white wine and meats serve red -

how bout when you're cooking the meal.

It should be served upon everyone being seated, before the food courses begin...

It depends on what kind of wine you are serving. if you are serving a wine that goes with the whole meal serve it at the start of the meal, if it only goes with the meat serve it when you serve the meat.

Most wines don't match up well to the acidity of a vinaigrette, so if the question is salad vs. main course, main course is the better choice.

This is an interesting question. I have heard from cooking net work that wines can be served at any time. There is such a wide varieties of wine's and some are served with meals and some with deserts. I prefer to have wine with my meal as it is a palate cleanser and I have enjoyed pairing wines with certain kinds of meats. But it is perfectly OK even to offer a glass of wine to your guests while finishing final touches of meal.

I would normally serve wine with the main course.But in this heatwave right now .I would say acceptable with salad but prefer a nice chilled chardonay with salad.

I serve wine before, during, and after the meal. But then again, I am a wino.

If there are appetizers and time for small talk before dinner, I will serve the wine then. However, if the meal is ready and there are no appetizers, I will serve it with the meat course. When this happens, however, can vary from situation to situation depending on whether the custom of the country is to serve the salad first such as we do in North America or to serve the salad after the main course such as is common in Argentina and other countries. The wine goes with the meat, not the salad, or with appetizers if they are present.

Serve a different type of wine with each course. You can research on the net what type of wine with what foods -- or much better, if you have a great wine shop you can get a lot of personal help there as well. It is a great way to experiment with different types of wine, especially if you have guests who are accustomed to drinking only white or red.

Matzaboy is right, the classy gourmet would have a different wine with every course, and would carefully choose each blend and vintage to match the ingredients and seasonings in each dish. It is a wonderful treat when you have both the budget and the know-how to do wine/food pairings at that level.

I usually shortcut that a little bit though, when I am just having a casual dinner with good friends, both to save money and to keep my hostess duties simpler. I will typically have one wine, usually a white, that works well with both my appetizers and my soup or salad course, so we start sipping over munchies and just stay with the same wine when we sit down. Then I will usually open a second variety, usually a red, that I serve with the entree. And for a real touch of elegance if I want to impress, or a special occasion, I will have some after-dinner drinks like Gran Marnier or a good port to serve with dessert and coffee.
