Tahini is a thick oily paste made from ground up sesame seeds. It's not quite like peanut butter, but it's extremely versatile. An 8 oz jar costs about $6, but you can use it for any number of things.

If you're having a baby shower and want a great budget stretcher made with tahini, here's an Arabic Tuna salad my ex taught me (at least how I remember it....but it's awesome and sooooo healthy....and makes more than enough with one batch for your 30 guests)

2 cans chunky tuna, drained and rinsed
1 can Garbanzo beans, drained and rinsed
1 can Cannellini beans, drained and rinsed
1 - 2 cans corn, drained (this is where you can really stretch this recipe)
1 handful cilantro or parsley chopped (don't skip this!)
1 small bunch green onions chopped (the greens are more important than the whites)
1 - 2 cucumbers seeded and chopped
1 large jar chopped green olives with pimento, drained
Any other fresh veggies you have around that are soft to the tooth (Roma tomatoes are great if you remove the seeds so they don't make it watery....he also used radishes, shaved cabbage, etc....all yours)

3 big Tbsp minced garlic
3 Tbsp salt (appx)
Pepper to taste
Fresh basil or chives, chopped - if you have them
8 oz plain yogurt
roughly 1/2 cup tahini

Put all the veggies in a big mixing bowl and gently mix them together. In a separate bowl, add the yogurt, herbs and seasonings, stir to mix. Then add in the tahini, stirring until it seizes up like peanut butter. It's really cool to see how quickly it happens. If it's not quite to peanut butter stage, add just a little more tahini paste.

Stir the yogurt/tahini mix into the veggies to coat them. Then gently fold in the tuna. Hold out for now on tomatoes if you're using them. Cover and refrigerate overnight. Adjust the seasoning in the morning. Add chopped tomatoes just before serving.

Feeds a small, hungry army....but ohhh so good.

Tahini is also the main ingredient in the mediterannean type of halva.

Tahini is becoming more common in European cuisine and can be found as an ingredient in many pricey ready made supermarket sandwiches.

Sesame paste is also used in Japanese cooking- the Japanese term for it is neri-goma. A popular dish mixes chopped boiled spinach, sesame paste, mirin, soy sauce, and sugar.

tahini is sesame seed paste. It is mixed with roasted, smashed eggplant along with lemon and garlic to create Baba Ghanouj(sh), which is a hummus-like dip. Tahini is also great as a sandwich spread in lieu of mayo. Can't think of what else to do with it.
