Question: I am having a suprise Birthday Party for my 16 year old son 75 people are coming?
we do not want pizza hot dogs or hamburgers but we want to do this on a somewhat of a budget any suggestions.

hmmm...
make your own tacos? have all of the essential fixings: cheese, lettuce, tomatoes, the meat, sauce, shells, guac., and so on and so fourth. you can make what i like to call "spunch" as well. it is a mix of one part fruit punch (i reccomend hawaiian punch) and one part sprite. there is always a good ole' fashioned popsicle for a snack, too! the possibilities of low budget party menues are endless!

Lasagana. Make it a bit different by doing this one:

Creamy white chicken lasagna:

15 whole artichoke hearts(canned)
3 tbp olive oil
4 cloves garlic chopped super small
1/2 cup pine nuts
1-15 oz container ricotta cheese
1 egg
1 cup finely shredded parmesan
1/2 tsp salt
1/4 cup flour
1 cup chicken or veggie stock
2 cups half and half (or even evaporated milkl)
1 cup shredded mozzerella cheese
9 lasgana noodels cooked (or you can use the "ready bake")
3-4 boneless skinless boneless chicken breasts
1/2 stick butter


Cut artichokes in 1/2 and then either boil teh chicken, drian-cool-and shredd or if you have a grill then put it on the grill and then cut into bite sized pieces.

In a sauce pan put 2 tbsp of the oil and add the garlic, pine nuts, and artichokes. Saute iuntil the artichokes get a bit more tender, and the pine nuts start to toast, but be careful to Not burn the pine nuts and garlic. Drain and tranfer to a large bowl.

Stir in the ricotta, egg and chicken, 1/2 cup parmesan, and

Melt the butter and remaining oil in a pan and sprinkle in the flour, let the butter and flour bubble for 2-3 min. Slowly add the cream and broth. Adding alternatly, and letting it thicken slightly between each addition.

In a small bowl mix remaining parm with the mozzerella.

Pour approx 3/4 cup of the white sauce in the bottoom of a 9x13 casserole dish. Lay down one ;ayer or fnnodles and then add 1/3 of the chicken mix, white sauce, and about 1/4 of the cheeses.

Repeat ending up with about 1/2 the cheese mix on top so it is extra cheese on top.

Bake at 350 uncovered for 35-40 min. Or until hot and bubbly.

Serve with a nice salad-you could even do the pre-mixed baggies from the market, and a frozen loaf of garlic bread.


******If you have a costco or sams club card buy the large jar of artichoke hearts there. This makes about 16 good size servongs so 5 pans. Bake them up ahead of time then reheat in the oven. Buy those tossable alumnium pans.
Or any pasta dish in general. Such as a chicken paremsan etc.. would be good.


Or do a take on the hot dogs by doing brats or other sausages..

There are a lot of Nice casseroles out there too that you could do on a budget.

***I also just saw the above link for a taco bar. Thatis a great idea. You can also do baked potatoe bars, pasta bars, etc... Or a soup bar.

I've always wanted to have a party at McDonald's but I cannot afford it...
It is honestly so fun...... you can:
* Eat Happy Meals
*Play in the "Play Place"
*Sit on cool chairs
* Sometimes they give you icecream :D
* Open your presents
* 3 is enough.. the fun never ends..
* Sit on Ronald's lap
* There's usually a special chair that has your age on it 8D
* A nice lady brings you a nice cake
* You get cool hats
*They give you goody-bags
* You can bring in things to entertain
* when I was little they gave out cool posters everyone can sign :D

OMG he could have 25 parties, 3 people each time! WHAT FUN :D
