Do a "Javanese Dinner" (Google it) ---there are about a dozen different items that you combine in layers on your plate. It's a lot of fun.
Do a 'Round-the-World' dinner---people bring different dishes that represent different countries.
Do a "Baked Potato Dinner"...people bring all kinds of different toppings for baked potatoes, such as:
Grated Cheese (or cheese sauce), Chili, Taco Meat, green onions or chopped chives,
sour cream, butter, broccoli, sauteed mushrooms------whatever you can think of
Do a "Cowboy Dinner" -- things that remind you of the Old Westerns....baked beans, ribs, corn
on the cob, cornbread, etc.
Do a "Dessert Pie Social" --- everyone brings a pie of some kind...fruit pies, cream pies,
custard pies, nut pies, (we have one every year at our church and it's so much fun---we eat half
of them and auction off the other half!)
Do an "Appetizer" potluck--everyone brings their favorite finger or toothpick food to nibble on.
You can make a whole meal out of it, and it's such fun to eat.

How about

1.Aa pasta party?

2. All things chicken (loosely interpreted you could use eggs which also helps with the puds!)

3. All things Bright and Beautiful - every dish should be colourful and also nutritious

4. Pot Luck supper where everyone brings 2 portions of either a sweet or savoury but no-one knows in advance what it will be. Get the organisers to provide bread or jacket potatoes. It always works out with a good balance . Don't ask why or how, it just does!

Great idea - I wish your group well

Do a cold sandwich bar! Get different assortment of meats and toppings..its like a mini subway and its healthy!
