I like to do a tray of various veggies roasted with olive oil, thyme, paprika,chilli and a pinch of salt

Paul I've had some success with finely chopping fresh vegetables in my grinder and then mixing them with spices, mashed potatoes, bread crumbs and egg (if you wish, cheese) to make something akin to meatloaf.

If you're talking about actually roasting vegetables, what about blackened peppers (make it pretty - use red, orange, yellow, and green) topped with balsamic tomatoes and a little fresh basil?

Chop up some potatoes, carrots, sweet potatoes, capsicums, eggplant and mushrooms. Mix together in a big baking dish with oil, garlic, salt and rosemary. Oven it up for about 20 minutes. The eggplant and mushrooms will act as your meat alternatives and the rest of the veggies are your sides.

3 pounds tender young green beans
1 garlic head
2 tablespoons extra virgin olive oil
3/4 teaspoon salt, more to taste

Wash and trim the green beans. Separate and peel the cloves of garlic. Combine the beans, garlic cloves, olive oil, and salt in a large bowl, and mix until all the beans are lightly coated with oil.

Spread the beans and garlic on two large baking sheets and roast them in a 400 degree F oven for about 35-45 minutes. Roasting time will vary with the size of the beans. They are done when they have a somewhat blistered look and are beginning to brown in spots. Try one -- if you like it, it's done.

Pile the roasted beans on a platter and serve them hot or at room temperature, as a finger food or on a plate with other foods.

what about roast veg and cous cous

Carrots, potatoes, onions, fennel.

A quick and easy veggy meal good for Sunday roast is roast some potatoes with some parsnips with a little oil and thyme. Cook some stick carrots sliced green beans a few peas, cook add together toss in butter sprinkle with a few sesame seeds.
For the main dish make or buy some pastry shortcrust, use a bun tray as for individual Yorkshire puds. Make case prick with fork part bake. fill with red onion marmalade chutney and top with Goats cheese. All pan fry cherry tomato add to tartlet and top with blue , goats or mozzarella cheese finish in the oven.
Or use the same Yorkshire pudding mix to make a pancake fill with rice mixed with vegetables, roll up and finished in the oven topped with cheese.

cube parsnips, sweet potatoes and regular potatoes and toss them with a pinch of salt and some olive oil. Roast them in the oven uncovered....mmm!

A lentil bake (recipe from one of the Cranks Recipe books - that is what the series of books is called, and not my name of Vegetarians - you can get the book from any good kitchen ware shop), with a home made tomato relish, green beans and sauteed potatoes (slicied potatoes, lightly brushed with olive oil, and roasted).

It smells, looks and tastes delcious - take my word for it, I'm a meat eater and I'm happy to eat it.

Any nut roast ,yorkshires, veggie gravy with a little tomato puree and some sage added parsnip,carrott,celeriac turnip/swede and potato mashed together to make a root vegetable mash and sprouts/sweetcorn/peas! ENJOY!
