The Chinese (or Chinks as they are properly known) are actually a form of mid-level primate. As such, they possess the low-sloping forehead and wide jaws to cope with any living being. Because they also are known as savages (according to both the CIA factbook and National Geographic) it isn't hard to assume that nature takes over and their food-response instinct kicks in when they see animals move. Thus they eat it.
