Have you thought about checking the phone book for any Hawaiian or Polynesian Restaurants that would be able to accommodate your request?

My dad's from Hawaii and so we'd have lots of Roast Pig at parties. Sometimes we'd have a professional just put the pig on a pike and roast it over spit. Sometimes we'd just order out.

The whole process of roasting is to make sure all the meat in the pig is cooked. The reason it's rarely practiced in the mainland is because few people aside from commericial bakeries have an oven that size that can roast it.

One option is if you're able to place an ad online to ask for someone in your area who knows how to roast a pig. If you've got a space in your backyard or wherever to do it, you can have a professional take care of it for you.

It's really just a matter of rotating the pig over the spit to ensure that the meat inside is cooked. That's the whole point of turning the pig on the spit. It follows the same principles as roasting a Turkey, which can take hours.

Because a turkey is such a huge bird, it takes longer to cook the inside. If you just do a quick heat, you'll only get the outside while the inside remains uncooked.

In Hawaii, they bury the pig in the sand because it gets hot enough and it's left there for hours for the same purpose. The whole point of the heat being allowed to have hours is so that it's sure to cook the entire thing.

You may want to check some Filipino restaurants to see if they know of anyone who is able to prepare it. As I said though, it's really just someone staying with the pig and making sure they turn it periodically so that all sections of the pig that are roasting get cooked.

If you were stranded on an island, roasting whatever you've caught on a spit is what you'd do. Theoretically, it's really a no-brainer, but experienced people know how how to roast it just right so that it's got that flavor. Depending on what you use for the fire, you can get that nice roasted flavor depending on what you use for the fire.

That part is really more art than science though.
