Lasagna, salad and garlic bread

chicken parmesan or chicken kiev, both can go a long way. dont forget the salad and bread sticks.

With this heat-- a veggie plate, a fruit plate, and a good chicken salad.

Bacon spagetti
cut bacon in to 1 inch peices,cook with onions when bacon is done leave greese in and pour in tomatoe sauce, garlic powder, salt ,and a little sugar,simmer bout 20 min.

Italian is always a preferred choice.

The pasta may be heavy to digest but it keeps your guests full and not crave for more.

But if you want to take it to the next level, mediterranean food is always welcome and tickles the palate.

most people love lasagna,a big bowl of salad and some Garlic bread...marinated artichoke hearts and black olives as an appetizer and voila!

Sushi! or Tapas!

Grilled Salmon with Cilantro Sauce

INGREDIENTS:
3 pounds salmon
1/4 cup butter
1 cup chopped cilantro
1 fresh jalapeno pepper, seeded and chopped
Old Bay Seasoning TM to taste

DIRECTIONS:
Preheat grill for high heat.
Lightly grease one side of a large sheet of aluminum foil. Place salmon on the greased side of foil. Melt the butter in a saucepan over medium heat. Remove from heat, and mix in cilantro and jalapeno. When cilantro is wilted, drizzle butter mixture over the salmon.
Place foil with salmon on the grill. Season with Old Bay. Cook 15 minutes, or until fish is easily flaked with a fork.

I would serve a pork tenderloin. They are simple to prepare yet fancy. You could make a potato dish and a veggie dish to go with. Roast some baby red potatoes in the oven with olive oil,parsley and garlic in foil. Carrots would be a good veggie here. I would buy baby carrots and cook them til soft in oven. You could also roast then in foil and add honey and butter to them. I would roast veggies while roast is cooking. Your pork tenderloin, cook in a baker, season it well and keep it covered. You might want to baste it in some white wine for a great fancy flavor. good luck and have fun.

Informal is most my parties, therefore this dish is good with friends. Apps: Boil up a couple of artichokes for 20-30 minutes with dipping sauce of blue cheese and may be Italian dressing.
Next, for a feeding of about 4-5, melt two sticks salted butter in good frying pan. Saute 6-8 cloves of garlic in the butter, maybe 1 or 2 shallots also if you like. Add fresh ground white pepper, fresh black pepper, a pinch or two of red Cayenne pepper, and a Cajun spice called Louisiana Cajun Spice (best on the market). All these are to your taste. When the garlic is translucent, add a cup of good white wine like Kendell Jackson Estates Chardonnay, or better yet, a wine you prefer so you can sip the rest while cooking. Get it boiling and add medium sized shrimp, fresh, with shells and legs intact. Amount depends on number of guests. Cover and saute for about 7-8 minutes. Spread newspaper or decorative table cloth down, pour mixture into large bowl and watch your guests go.

In my opinion, anything light since it's hot summer.. and non staining if dropped in their laps...lol.....also something you can prepare early so you can enjoy your guests....It also depends if you are having a casual party or fancy....that is easy to adjust...

One recipe I love to serve is a layered salad....and you can make it the night before and then toss it at serving time...

Plus marinated meats that you prepare the night before....

Plus the dessert you make the night before....

Here we go...

Buy a bag of chicken breasts boneless and skinless or your fav. parts...
In a plastic bag place your oils and spices and then the chicken
marinate overnight so it will have a wonderful flavor when cooked.

I never measure just wing it....get it..chicken......lol....
into the bag place 3/4 cup of soy sauce
3 cloves of smashed garlic
1 or 2 inches of ginger grated or sliced
1/2 cup of dry sherry
1/4 cup of brown sugar
black and red pepper to taste
1/2 cup of veg. oil

Mix these together and place the chicken in there and seal and refrigerate overnight....when it's time to bake it...place in the oven in a large baking pan at about 350 degrees..and cook until fork tender...and turn during cooking once....if it starts to brown too fast cover with foil....

the salad I love is this: Layered fruit salad
3 small cans mandarin oranges
washed and chopped celery 3 stalks (remove the strings)
walnuts or almonds....toasted and chopped 1 cup
dark seeded grapes 1 cup washed and cut in half or left whole
2 cans of chunk pineapple the large sized can about 15 oz.
1/2 cup golden or dark raisins
1 box of fresh strawberries...washed at last minute before cutting up...
1 bunch of Romaine lettuce washed and broken apart

chill all the canned fruits...and then chop the other ingredients
when it's time to assemble before the party....get a large not too deep bowl....and line it with the romaine lettuce. or you can make each persons salad plate separately.....depends on your space and time....

drain all the fruit from the cans...and mix lightly...in big bowl...then add the other ingredients...place these on top of the lettuce..then make a dressing of mayo, sour cream and pinch of salt and a couple tablespoons of sugar..then add orange or lemon zest the scrapings of the rind....mix these together and pour over the big bowl of fruit or each plate as desired

for something easy..a dessert....buy a pound cake...slice it into 1inch pieces and line a bread loaf pan with them...bottom and sides..then get some sherbet and ice cream....layer them alternately cake, orange sherbet, vanilla ice cream...between each slice of cake like a rainbow..then after you finish wrap in alum. foil and freeze ...and remove an hour before you will need it ...keep in refrigerator..until you are going to slice it....slice each piece and serve with whipped cream and shavings of chocolate...or chopped nuts...whatever you like....toasted coconut...you be the judge..hope this helps....what time is the dinner party? LOL

Chicken Curry with Lime

Ingredients
(Serves 4)
4 free-range chicken breasts
Oil
1 clove garlic, crushed
2 x 200ml cartons coconut cream
2-3 tbsp mild curry paste
1 lime
Salt and black pepper
Chicken stock (optional)

For the garnish:
Fresh coriander

Method
Cut the chicken into cubes and fry in a little oil with the garlic, until lightly browned.
Add the coconut cream and curry paste, stir. Add the juice and grated rind of the lime. Season and bring to the boil.

2-, 3- and 4-Oven Aga
Transfer to the simmering oven for about an hour.

Conventional cooking
Cook on a low heat on the hob for about 40 minutes

Taste and adjust the seasoning, if necessary. If you like more liquid, add a little chicken stock. Serve with Basmati rice, garnished with coriander and a salad.

Italian, mexican, or indian

To have an easy time and have everything prepared previously, why dont you try Humus or Taramasalata (greek type dishes)
