Some ideas:
A platter with crudites - served with hummus
A fruit platter - with chunks of fruit for e.g. pineapple, watermelon, kiwifruit cut in half, cherries, apricot halves, grapes, strawberries dipped in chocolate etc. or you could have fruit cut in chunks & thredded onto a wooden skewer
Meaty/fish platter: Hot wings, stuffed & wrapped bacon dates, grilled shrimp skewers, spareribs, chicken strips, mini beef kabobs
Sandwich/wrap platter - Crusty baked garlic bread with chicken salad, sundried tomato wrap with hummus, turkey/avo/brie sandwiches, egg salad on rye, porchetta sandwiches, vegetarian sandwiches (basically any filling of your choice)
You could also have a platter with pita bread cut into small triangles that you warm & serve with a dip. For dips you can use hummus, tzatziki, salsa, or make a cottage cheese dip by blending cottage cheese, a few sundried tomatoes or a teaspoon of pesto and seasoning of your choice.
Savoury platter could have devilled eggs, mini quiches, crab or salmon cakes, blinis topped with cottage cheese & a small piece of smoked salmon, springrolls, mini pizza
For a summer platter you need to think about food that is in season. Salads and light food would be the best option to go for. Small smoked salmon pieces with creme fraiche and some cucumber would be nice. It really depends on your budget and how many people this buffet is catering for. Remeber presentation is everything, we eat with our eyes first. Good luck!
