Menu suggestions for a Hawaiian Luau picnic?

I'm going to a beach picnic and we are having a luau theme - any not too difficult suggestions for food? Something easier than roasting a pig in the sand at the beach, for example.


Answers:
Do it yourself kebabs. Bring covered dishes of cut up stuff -- ham, pineapple, sweet pepper, hot pepper, cherry tomato, mushroom, cucumber, (if you have vegetarians, firm tofu), yellow squash, onion, etc. Also get a box of disposable gloves from a restaurant supply or a drug store. Soak the skewers in water overnight so they are more pliable and less likely to char. This way people get what they want. Someone still need to be at the grill with tools and hand protectors to help the do it yourself grillers.

The kebabs can be munched off the stick, just as they are, or they can be de-skewered and served in a pita pocket, over cold rice salad, or over hot rice. It's a nice touch to have green peas and almond matchsticks in the hot rice.

If you have time, roasted (in hot coals, wrapped in aluminum foil) sweet potatoes are good and very Hawiian.

Fish tacos (in soft tortilla) are also considered Hawiian fare.

Why not marinate some boneless pork chops that have been cut up in pieces? Then you can skewer them and cook them over the bonfire. Marinate them in pineapple juice, salt, pepper,& white wine vinegar, then alternate them on the skewer with pineapple chunks and onions.

Bring fresh, delicious tropical fruit! Its easy and healthy and it tastes wonderful. Some suggestions:

- pinneaple
- coconut
- mango
- banana
- papaya
- starfruit

1. Hawaiian pizza:
with pineapple and pepperoni.

2. Fruit sald:
made with fresh mangos, papaya, oranges and kiwi with cocnut milk and almonds to taste.

3. Grilled chicken steak:
chicken breasts marinated with pineapple and orange juice and coconut milk, black pepper and garlic.

4. Aloha rolls:
minced meat "beef" or "pork", dipped in lemon, herbs and grilled over onions, then stuffed in pita bread with a zesty mango and chilly sauce.

5. Coconut cookies:
and orange flavored shrotbread.

6. Mango sorbet:
scooped over raspberry sauce and topped with fresh coconut flakes.

7. Chicken wings:
marinated in honey, orange and pineapple juice mix along with pepper and chopped garlic and slightly brushed with BBQ sauce.

8. Steamed white rice:
american or basmati white rice made the indian way and topped with raisins and cubes of fried potatoes to be served along the chicken.

9. Pina colada.

10. Mini burgers:
made with minced meat and mango slices, lettuce and honey mustard with cream cheese.
