Question:

Can anyone tell me what I should cook with a ribeye steak?

I am haveing a friend over for dinner tomarrow, and I am grilling some steaks but I want to make something for sides that are impressive yet simple. anyone have any ideas?

Answers:
baked potatoes, corn on the cob, with all the trimmings. and a simple salad... simple and easy and you will never go wrong.

potatos...warp in foil with butter and throw on the coals before you start the steaks. The potatos will take about 30 minutes. Also a couple ears of corn the same way.

Steam brocolli, asparagus, cauliflower and whatever else you like. Have cheese sauce on the side. You can buy it already made and just have to heat it or make your own with cheese and beer.

Sure baked pototoes with sour cream and chives and french style green beans

Fresh from the garden grilled silver queen corn, grilled asparagus, twice baked potatos, garlic rice are a few to chose from. No matter what sides you fix, make sure there is plenty of homemade garlic bread

baked yams, guacamole

side salad, loaded bake potatoes and steamed brocilli with melted velveta cheese and some sauteed mushrooms for the steak

Grill some corn on the cob in the husk on the grill with the steaks. Delicious.

Classic mashed potatoes are always yummy! Make like a veggie casserole or some broccoli and cheese!! Those are always simple but everyone loves it!!

Make mashed potatos then bake them till brown and crispy. SOOOO GOOD!! If you like mushrooms, slice them (or don't) the way you like them, then make a small "boat" out of tin foil at least two layers thick. Put your mushrooms in with a lot of butter, salt, or anything else you like on them. Make sure you close up the "boat" completely and throw it on the grill. It will take about 20 to cook them. Very very very good. Or look up some easy grill things online. Good luck!

How about some grilled vegetables like zucinni and asparagus.

I would do some noodles. LIke in a creamy sauce, or even a light lemon one. Use angel hair.

garlic and chive mashed potatoes, scalloped potatoes, twice-baked potatoes. Grilled vegetables (eggplant, red onion, and red pepper brushed with olive oil) with aioli dipping sauce. how to make aioli: plop some mayo into a bowl, add a squeeze of fresh lemon juice, a bit of minced fresh garlic, and a drizzle of olive oil. mix together, taste, and add a little of whatever it needs until you get the mixture right. you should make it the day before so the flavors have time to marry while in the fridge. I have made this for chefs and they're always impressed. It's so easy to make, too.

Oh, and peach cobbler for dessert!

Southern Peach Cobbler
Prep Time: 20 Minutes
Cook Time: 40 Minutes Ready In: 1 Hour

8 fresh peaches - peeled, pitted
and sliced into thin wedges

1 teaspoon fresh lemon juice
2 teaspoons cornstarch

1 cup all-purpose flour
1/4 cup white sugar 1/4 cup brown sugar
1 teaspoon baking powder
1/2 teaspoon salt
6 tablespoons unsalted butter,
chilled and cut into small
pieces
1/4 cup boiling water

MIX TOGETHER:
3 tablespoons white sugar
1 teaspoon ground cinnamon

DIRECTIONS:
1. Preheat oven to 425 degrees F (220 degrees C).
2. In a large bowl, combine peaches, 1/4 cup white sugar, 1/4 cup brown sugar, 1/4 teaspoon cinnamon, nutmeg, lemon juice, and cornstarch. Toss to coat evenly, and pour into a 2 quart baking dish. Bake in preheated oven for 10 minutes.

Well baked potates are always good.

If you are on a diet though....

Broiled Veggies (much easier than Grilled)

Clean & Cut up the following veggies into large chunks
Onions, Zuccini, Yellow Squash, Bell Peppers, Carrots
(You can use baby carrots in place of cutting up carrots)

Also plum/cherry tomatoes, and mushrooms are good additions

Throw them all in a large aluminum pan (you know the throw disposable kind you get into walmart or the grocery store)

Now for the "Marienade"
In a bowl mix a bottle of A-1 sauce, 1/4 can of Beer, 3 dashes of Lawry's season Salt, a shot of Jack Daniels. Blend in the blender, and poor over the veggies.

Throw (Well, place gentley unless you enjoy cleaning up messes) into the oven and broil. DO NOT COVER, Cook until every thing is lookin slightly shriveled and maybe getting some black edges but is still pretty firm

(20minutes??!? never really timed it, myself just watched it ever 5 or so minutes)

Pull out of the oven. If it's casual guests can serve them selves picking the veggies they like. If it's more formal one large cooking spoon/ladel = a serving. Again if there are veggies the guests dont like they can pick them out/eat around them.

INCREDIBLY easy and wonderfully tasty, made this dish up my self.

If you want to kick it up a notch and possibly make it spicy throw a little (a LITTLE) cayenne or Louisianna Hot Sauce on top before broiling. Wonderful complement to the Steak.

Also serve some warm french bread & or corn on the cob (depends on how formal you are going) and mmmm mm Delicious

Dessert:

Grab some Brownies from the Grocery story, Some Good Vanilla Ice Cream, some Rich chocolate/Fudge Sauce, and a Bottle of Port Wine.

Cut the brownies into approx 1" cubes (if you can buy like that even better, I believe Albertson's has them like that), and then Warm them up

Warm up the chocolate/fudge sauce and put 3tbs into the bottom of your dessert dish, then place 2-3 warm brownie cubes in the fudge,

Cover brownies with 1 decent sized scoop of ice cream,

Put an additional 3tbs of the fudge/chocolate sauce over the ice cream, and then top off with a shot of Port Wine.

VERY SIMPLE, this is how I impressed my fiance with my "cooking skills" when we first started dating.

Little did he know this and 2 other dishes was all it was limited to at the time. ;-) Enjoy and Good luck

grill some asparagus. toss in olive oil, grill, sprinkle with salt, pepper, lemon juice and garlic.

A nice fresh green salad...wild rice with red peppers, and tomoatoes. Plus a garlic sauce to go with

Fresh asparigus, new potatoes, & beer.

Mashed potatoes with some horseradish, milk & butter - don't forget the salt & pepper! These would go great with a ribeye.
Or, just toss some baby red potatoes or fingerling potatoes with a few crushed garlic cloves, fresh chopped rosemary, salt & pepper & olive oil. Bake on a cookie sheet for 30-40 min @ 375 or until golden. So easy and so delicious!
For a veggie, I would just grill some Asparagus that has been lightly drizzled with olive oil, salt & pepper and serve with a lemon or garlic aioli.
Artichokes are also great this way, just boil them until just done, drain and cool. Cut in half lenghtwise, clean out the choke and brush with some butter and grill just to lightly char - yum!

You are all making me hungry, and I just had lunch!
A caterer from a previous question said his stuffed mushrooms were good, and I would like to add real home- made onion rings to the list.
Do a surf and turf, buy some crab legs, or a lobster tail, or some shrimp.
A broiled tomato would be colorful, and easy, top it with parmesan cheese.
I love home-made cheese sauce, put it over boiled potatoes, stir, put in a casserole, stick it in the refrig the day before, then all you have to do is bake it until it is buubly the day of.
Have some crusty hot rolls and butter, that easy, and good.
You did not say if your guest was a girl or a guy, but guys love appetizers of most any kind, and don't forget a good red or burgundy wine, or some of his favorite beer. Hope you are 21!
