Here's some of my recipes I always use for Hawaiian luau parties. They are always a hit!

Pineapple Chicken

1 c. pineapple juice
1 c. pineapple chunks
1/2 c. packed brown sugar
1/3 c. light soy sauce
2 lbs chicken tenderloins

In a saucepan, mix pineapple juice, brown sugar and soy sauce. Bring to a boil and cool. Pour marinade into a bag with chicken. Marinate at least an hour. Grill chicken with pineapple chunks until chicken is done and juices run clear.

Island Beef

2 lbs. beef, cubed (I used stew meat, but you could use your choice)
1/2 c. lemon juice, fresh
1/4 c. olive oil
3 tbs. honey
1 tbs. jalapeno, minced
1 tbs. fresh ginger, minced
1 tbs. soy sauce
1 1/2 tsp. allspice
1/2 tsp. cinnamon
1/4 tsp. cloves

Whisk marinade together and pour in a bag with the beef. Marinate 8 hours or overnight, depending on your cut of beef. Reserve marinade for basting. Grill, basting occaisionally, until desired doneness.

Island Krab Salad

2-3 cups uncooked noodles, your choice
1 8 oz. can crab meat
1 red bell pepper, sliced lengthwise
3 tbs. lettuce
1 tsp. lime zest
3 tbs. lime juice
2 tbs. olive oil
1 tbs. honey
1/2 tsp. ground cumin
1/2 tsp. fresh ginger, minced
1/4 tsp. salt

Cook noodles until tender. Rinse and cool. Mix noodles with lettuce, pepper and crab. In a bowl, whisk together lime juice, zest, oil, honey, cumin, ginger and salt. Pour over salad. Refrigerate at least one hour before serving!

Island Rice

2 cups hot cooked rice
1 11 oz. can mandarin orange segments
8 oz. can crushed pineapple
1/2 cup red peppers, chopped
1/2 cup slivered almonds, toasted
1/2 cup coconut, toasted
1/2 cup green onions, sliced
2 tbs. mango chutney
1/4 tsp. ground ginger

Combine rice, pineapple, oranges, red pepper, almonds, coconut, green onions, chutney and ginger in large skillet over medium-high heat.

Stir fry until heated through.

Shrimp kabobs....marinate shrimp in the KC Masterpice mango chipolte seafood marinade. Then alternate shrimp, pineapple chunks and sweet red peppers chunks on a skewer. Then grill and brush some of the marinate on the skewers.

Kalua Pork w/ cabbage
pork butt
salt and garlic
soy sauce
cabbage

take pork butt rub salt on , wrap in aluminum foil with garlic and bake at 350 for 2 to 3 hr, you are looking for pork to be cooked and easy to fork, after cooked, take fork and shred into pieces, with skillet or wok, add vegetable oil, pork, shred cabbage and saute with soy sauce to taste, should have little soy sauce taste, will be done when cabbage is transluecent. serve with white rice

Spicy carrot and pineapple side dish:
Saute carrots until tender. Toss with pinapple chunks, salt, pepper and hot red pepper or chilli powder (to taste) and butter.
Warm in oven and serve.

Mango and Orange Chicken kabobs:
Puree mango with orange juice and marrinate ck.
Put on kabobs with green peppers and onions and grill. Yummy.

Coconut rice is always easy and can be cheap if you buy the canned coconut milk.

Grill or bake some pork chops, then smother with pinapple preserves or jelly, Easy, cheap and yummy!

order a hawaiin pizza and have some fruit kebabs too. grate some carrot with sliced peppers, sweetcorn and a dash of chilli.Mmm Mmmm!
