It doesn't have to be a metal, some are plastics too. it can be any shape and size, you press it onto the cookie dough thats been laid flat, and you get some shapes according to the shape of your cutter :)

Using a cookie cutter, instead of a knife, your cookies will have a straight and clear cut so it will be easy to recognize the shape of the cookie. Most cookie cutters take the shapes of animals, people, objects etc.
