Blanch asparagus - drizzle with balsamic vinaigrette - cool a few hours at room temp. Wrap each with prosciutto. Serve 3 - 5 as a salad.

Salad of baby greens, roasted pears, goat cheese and pistachios. Vinaigrette made with hazelnut or walnut oil and a bit of truffle honey.

Mussels or clams cooked in white wine, garlic and parsley.

Olive tapenade on crostini.

Chop some pitted Kalamata olives. Add chopped garlic, chopped toasted walnuts, chopped fresh parsley to taste. Mix together and add some extra virgin olive oil. Mix together and serve with some toasted slices of a baguette.

You could also add some crumbled blue or feta cheese to the tapenade.

Sorry I don't have measurements for this. I do it free hand, but it is delicious.

Roasted beet and baby watercress salad with goat cheese and orange honey mustard dijon vinaigrette.
peel and roast your beets at 400 until skewer tender - dice - chill - toss with dressing.
Plate the watercress and use a ring mold to put on the beets - crumble goat cheese around the plate and finish it with some dressing - yum
