cake ball truffles!
Crumble up and then mix the lemon drizzle cake with canned frosting. Then form into small balls and dip in melted white chocolate.

Or you might be able to slice and heat the cake. Top with vanilla ice cream then top with warmed cherry compote (maybe even use a little rum/bourbon/brandy to flambe it?)
