Question: Light appetizers for a dinner party.?
im having a dinner party on saturday and the main course is very rich and heavy. so i would like to start off with something light and tasty. usually when i make appetizers there dips or things made with dough... which will be too heavy for our main dish (which is homemade italian sausage,kale,and leek ravioli baked in homemade alfredo sauce) im having a hard time finding an appetizer that is light and impressive. any recipes would be appreciated!

I think my Artichoke Squares would fit beautifully with your Italian-themed meal

These are a great little appetizer for a casual get together. Cut the squares a little larger to serve as a side dish with your favorite meal

Ingredients
12 ounce can artichoke hearts, not marinated
1 tablespoon extra virgin olive oil
2 medium shallots, minced
3 large eggs
2 large egg whites
8 ounces Jarlsburg cheese, shredded
fresh flat leaf parsley, chopped
coarse salt, sea salt preferred
freshly ground black pepper
additional olive oil, for the pan
additional parsley sprigs, optional

Method
Preheat oven to 325°

Finely chop the artichokes; set aside

In small saucepan, heat olive oil over medium heat, cook minced shallots until tender – about 5 minutes

In medium bowl beat or whisk eggs and egg whites until blended. Stir in cooked onion and chopped artichokes, Swiss cheese, parsley, salt and pepper. Lightly coat a 12" x 8" baking dish with olive oil. Spread mixture evenly into coated baking dish

Bake 30 to 35 minutes until set and lightly browned. Cool 15 minutes. Cut lengthwise into 4 strips then cut each strip crosswise into 5 pieces

Arrange appetizer on serving dish; garnish with parsley sprigs if desired



I think fruit makes a nice light appetizer. You can add a nice fruit dip to go with it.

Prosciutto wrapped asparagus spears? Or maybe a phyllo dough pizza squares w/ feta, basil and tomato?



Keep it simple. Try some Shrimp cocktail and Smoked Salmon. Easy and light.
