Im writing a menu for an uperclass gastro pub and woul really like some ideas/insperation for all courses?!

Depends somewhat on the part of country you are in . I'm in the South.
Shrimp and lobster or crawfish quesadillas, or a twist on it
Tuna tartare with crispy wontons in a pyramid with some wilted greens
Grilled flaky fish on top of hash brown (upper scale fish and chips IMO)
A really good lobster bisque or she crab crab soup
You need an awesome, signature bread
Shrimp and avocado cocktail as a 'soup' with a couple large shrimp on the side of a chilled martini glass
Smoked Salmon and creme fraiche with some bite sized toasted bagels
oysters or mussels
crab cakes
sweet potato fries
cobb salad
buffalo or tuna burgers
pickled veg, olive, cheese, flat bread plate
apple crisp
