Why in professional kitchens do they scrub DOWN, but at home we wash UP?


Answers:
Good question! Let someone who is better equipped than I to give you the answer you are looking for. But for me in a professional kitchen they scrub the tops down and at home we wash up the dirty dishes.

why would you want to know?

because otherwise the dirty water is running on the bits they've cleaned and then the health inspector will close them down!

Washing up refers to the plates and cutlery etc but scrubbing down refers to the worktops

Scrub down becuase the last thing that is done is the floors are washed.

Anyone tried to make water flow up hill?

Scrub down refers to work surfaces not pots and pans.

Because they literally scrub from the top down - from the counter tops down to the floor which is mopped. We just do the absolute minimum - wipe the counter and wash up most of the time.

I don't really know.I also don't know why we drive on a parkway and park on a driveway.Just another of life's mysteries I guess.
