Question: Whats a good meal for a small dinner party (7 people)?
I need a good meal for a small dinner party. I want to have a soup, salad and a main dish. Does anyone have any suggestions for what i should make?

Minestrone, tossed salad w Italian dressing and lasagna can all be made ahead of time so you can enjoy the party.



Easy French Onion Soup

1 can Beef Broth
1 small onion cut into thin slices

Boil the onions in the broth until tender. Put some croutons or toasted french bread in a bowl and pour soup over and then put a slice of swiss cheese or some grated Parmesan on top. (This would only serve 2 people so you'll have to adjust for 7)

Chicken Cordon Bleu

Use a meat tenderizer and put a chicken breast between saran wrap. Pound the chicken to get it a bit tender. Fill the center with a slice of swiss cheese and ham. Fold up the sides of the chicken breast to make a "pocket" in the center of the chicken breast. Wrap in saran wrap and pound the stuff chicken breast lightly to get air bubbles out of chicken breast. At this point, you can leave wrapped stuffed breast and put in the refridge and cook at a later time when ready to finish cooking your meal.

Dredge in powdered corn starch and then fry in skillet of melted butter until completely cooked. Outside of chicken should be lightly golden brown. Serve with a lemon wedge.

Waldorf Salad

Cut up and peeled apples (toss in lemon juice to keep from browning as you cut them)
Raisins (optional)
Celery
Mayo
Walnuts (optional)
Mix everything together and refrigerate until ready to serve (overnight is fine).

There....that's my suggestion.



Soup: make some goulash, it's like a stew, but tastes amazing. Or chili is a good thing on a cold day. Or if you live on the east coast, clam chowder is a classic.
Salad: just use some lettuce, tomatoes, carrots, mushrooms, and whatever else you see at the store.
Main dish: can't go wrong with spaghetti and meatballs.

Do an egg drop soup, a light garden salad with mandarin oranges and crispy noodles (or crushed fortune cookies!). For the main dish make crispy beef or sesame chicken. Its fun to make home made and more fun to serve with chop sticks.



Stuffed manicotti. There is a good recipe right on the box of shells. :)
