Colby is really good on sandwiches...but I love sharp cheddar in some soups, dips, and on crackers.

I LOVE all cheese.. But most of all, I love white cheeses vs. orange chesse.. But heck, I just love cheese :P
Very old cheddar...after all you might as well be able to taste something that you eat! It's great with all fruit, and served with wine.
