Have a NASCAR themed party. Hang checkered flags, show the toon movie "Cars," and serve race track inspired or race watching foods like chili, dogs, chips, and root beer.
No one will miss the booze, and decorate the cake with cars!

Well, think of what he likes, and the time
of the year. If it's warm where you live, go on with the BBQ, and just go on with something he likes. Maybe call up a relative of his and ask what they think would be suitable. Hope these ideas help!
Hmm mm - - - - why not combined Paint-balling with Cars - - - - buy a complete junker for a hundred bucks and paint ball the heck out of it.
An Indy 500 or a Stock Car racing Night Theme would be way better than Casino or Hawai'i'an Luau if your husband is into Cars. Assuming your friends are reasonably fit and heck ya say they are into soccer, set up a race course. Get together a minimum of four preferabbly six carts; anything four wheeled that can be pushed by two or three people. And it is off to the races.
Back to that junker car; park one in the corner of the yard and smash the heck out of it.
