Two new favorites

Spicy bruscetta chicken bake

Ingredients
1 1/2 lb. boneless skinless chicken breast cut into bite-size pieces
1 cup shredded pepper jack cheese
1 14 1/2 ounce can diced fire-roasted tomatoes
1 6 ounce package Stove Top for chicken
1/2 cup water
3 cloves garlic, minced
1 tablespoon Italian seasoning, Dell'Aple recommended
Big pinch kosher salt
Pinch red pepper flakes

Method
Heat oven to 350 and spray a 9 x 13 pan with Pam

Lay the chicken in an even layer in the bottom of the pan and sprinkle with the cheese.

Mix tomatoes, stuffing mix, water, garlic, and Italian seasoning, salt, and red pepper flakes together until stuffing mix is moistened. Mound the stuffing mixture on top of the chicken and the cheese in an even layer. Bake 30 minutes or just to the point when the chicken turns opaque.



Crispy beef

Ingredients
2 cups spiral pasta
1 pound ground beef
3/4 cup diced onion
1 garlic clove, minced
1 14 1/2 ounce can diced tomatoes (I like the fire-roasted kind)
1 10 3/4 ounce can condensed cream of mushroom soup
3/4 cup shredded cheddar cheese, sharp as you like
3/4 teaspoon kosher salt
1/3 cup sour cream
1 2.8 ounce can french-fried onions

Method
Heat oven to 350

Cook pasta according to package directions. Meanwhile, in a Dutch oven, cook the beef, onion and garlic over medium heat until meat is no longer pink and the onion is translucent.

Drain pasta; add to the beef mixture with the tomatoes, soup, cheese, sour cream and salt.

Transfer to a greased 2 quart baking dish and top the surface with the onion rings.

Bake 30 to 40 minutes until hot and bubbly and the top is deep golden brown.



There are plenty of good and cheap cookery books. If you have a particular style of cooking then get that type of book e.g. I like have a couple of pasta books which are great as they are quick to make and include things easy to make a lot of at once such as pasta bakes and lasagne's. I also have a spanish cookery book with lots of interesting things. The 'good food' books by BBC are great for quick meals.

Here are a couple of things I make for dinner a lot:
steak and kidney pie,
putanesca sauce with pasta,
pasta with tomato sauce and tinned clams (very quick, little prep),
diced chorizo or bacon in a pasta sauce,
lemon sole with chopped shallots splash of white whine and some thyme, rosemary and parsley wrapped in greaseproof paper in oven for 12-14 minutes,
chicken curry,
assorted tapas,
CHILI con carne with rice or jacket potato ,
homemade pizza, can be made more healthy too,
gammon steaks with a english mustard, lemon juice and sugar marinade, mix until runny paste formed,
salad can be made interesting with avocado, cheese, onion and a nice dressing,
homemade fishcakes and new potatoes,

Buy a cook book! Like Jamie Oliver's 30 minute meals, they've got some really good recipes in it, and it doesn't take that long to cook! If you don't want to buy the book, he has a TV show on it.

My personal favourite meals are:-
Pasta bake, jacket potato with cheese and beans, spaghetti bolognese.
I do like a cheeky chinese aswell ;)

can even cook on a bed of fresh spinach before putting into the oven for added veggie goodness



Crunchy Beef: basically its just shell noodles beef tomatoes cubed and tomato sauce its Delicious you top it off with onion crunchies
Sweet and Sour meatballs with rice
Meatloaf with baked potatoes
Tortilla Soup
Brushetta
Anti Pasta: angel hair noodles marinated mozzerella turkey beef basil and mini tomatoes mix together

My kitchen



Think of the items your family likes the most & then google recipes for it. (ie - chicken or eggs)
Go to the library & take out a few cook books for inspiration



Do what I do, browse the Frozen Food section, look at the pictures - if it looks good, make it from scratch!!

Stir fry, pot pies, soup, salmon. Go to SAMs club. They have tons of really good ready to make entrees.



new ideas are hard to recommend ......it depends on what you like and how daring a cook you are.



Google a recipe you might like: there are plenty around.

Meat loaf, mashed potatoes, corn on the cob.
