The fruit pizza idea was a good one. I also recently made this dessert for a BBQ and it was gone:

Eclair Cake Recipe courtesy Paula Deen

Recipe Summary
Difficulty: Easy
Prep Time: 10 minutes
Inactive Prep Time: 24 hours
Yield: 20 to 24 servings

Cake:
1 (1-pound) box graham crackers
2 (3 1/4-ounce) boxes instant French vanilla pudding *
3 1/2 cups milk *
1 (8-ounce) container frozen whipped topping, thawed

* in lieu of the boxes of pudding and the milk, I used 8 premade Swiss Miss vanilla cups...it made really short work of this dessert.

Frosting
1 1/2 cups confectioners' sugar
1/2 cup cocoa
3 tablespoons butter, softened
3 tablespoons milk
2 teaspoons light corn syrup
2 teaspoons pure vanilla extract

Butter the bottom of a 13 by 9 by 2-inch pan. Line the whole graham crackers. In bowl of an electric mixer, mix pudding with milk; beat at medium speed for 2 minutes. Fold in whipped topping. Pour half the pudding mixture over graham crackers. Place another layer of whole graham crackers on top of pudding layer. Pour over remaining half of pudding mixture and cover with another layer of graham crackers.

For frosting, blend together sugar and cocoa. Add butter and milk, mixing well. Add corn syrup and vanilla. Stir until creamy. Cover cake with frosting and refrigerate for 24 hours.

Paula also makes a version of banana pudding that is to die for:

Both recipes are tried and true. My whole family loves them (except one sister who hates sweets and chocolate...I think she must be adopted).

EASY Answer - EASY Dessert. Watermelon. For the adults who are drinking - Watermelon 'Shots' (Cut a hole and pour in favorite boose).

Wow. great ideas. But I like the make your own sundae thing. Buy a couple kinds of ice cream, and the toppings. Or if it is a family thing, call everyone and have them bring one topping, keep track so there are no duplicates. We did this at work, once, everybody liked it.

Fondue
Chocolate and Caramel........if you don't feel like making it from scratch you can by these two items in the produce section of you grocery store. They come in tubs and you can but in the microwave.
I use two warmers one for the chocolate and one for the Carmel.
These are a list of what I use below.
Strawberries, bananas, apples, kiwi, pineapple, any fruit that works well with chocolate.
Biscotti, shortbread cookies, pound cake, angel food cake
Pretzels
Chopped nuts, coconut
An alternative to making your own sundaes.

banana pudding

For family gatherings that include a buffet style meal I always like to make some really excellent cookies or cupcakes. The portability is highly popular. People don't feel like they have to grab a 2nd plate just a napkin will do. They do not get the ooh's and aah's of a dramatic cake or trifle but people will rave and gobble them all up anyway! If you have the time make a selection of cookies such as double chocolate chocolate chip(chocolate dough with chips in it), peanut butter, and snickerdoodles. This covers most peoples likes and dislikes. If you go with cupcakes I would make some chocolate and some that are lemon, vanilla, or strawberry. Don't forget the sprinkles though--cupcakes with sprinkles are always the most popular!

LARGE TRAYS OF FRESH FRUIT

get a store bought angel food cake, some fresh strawberries, large box of strawberry jello, and cool whip. Tear the angel food into bite size pieces, lay in 9x13 cake pan, toss with sliced strawberries, pour prepared jello over cake and berries and refrigerate. Just before serving, spread with cool whip...yummy and refreshing
