Question: What should i cook my boyfriend for dinner?
now my boyfriends coming to my house for dinner and hes going to meet my mum and close family
what should i cook... i want to impress but to not be over the top !

any help
i was thinking roast chicken and mash pot's ... or roast potatoes or curry.. i do want to cook chicken though, and any dessert ideas, brownies and ice cream?

Roast chicken would be a good idea, if you want to impress, spice it up a bit with a little bit of Sichuan pepper sprinkled on the skin with the salt (only a little bit, like 1/2 a teaspoon because it numbs your mouth a bit) and maybe some roasted sweet potato along with your white spuds. Green beans and carrots are always good and gravy made from scratch .

Take the roasting juice from the pan, skim off the fat, add fine sliced onion and simmer. Melt a tablespoon of butter in a separate bowl and add a tablespoon and 1/2 of white plain flour to make a beurre blanc (same as the base for a cheese sauce)
add a stock cube and a splash (1/2 glass) of dry white wine to your juice along with a teaspoon of honey and two teaspoons grain mustard.
Add the thickening a bit at a time and stir in well (really well, remember the blender is your friend) keep stopping to check thickness before adding any more but if it gets too think, don't panic, add a bit of water. Pour onto a jug and serve.
Sorbets are good pud and can be made from scratch well ahead of time.

Do something different than just plain old roast chicken. Show him you can really cook with this very easy chicken Parmesan dish. Double it if you have to.


Chicken Parmesan – No Fry

4 boneless skinless chicken breast halves (about 1 pound)
1 C All Purpose Flour
2 T salt
1 T pepper
2 T Garlic Powder
2 eggs
1 cup Italian Flavored Bread Crumbs
2 cups marinara sauce (home made preferred)
2 cups shredded mozzarella cheese
1 cup shredded Parmesan cheese


Preheat oven to 400F. Pound breasts to an even thickness.

Mix salt, pepper, and garlic powder with the flour in a wide mouth bowl.

Beat the eggs until mixed in another wide mouth bowl

Put the breadcrumbs in a 3rd bowl, making an assembly line

Coat the breasts first with the flour, then the egg, then the breadcrumbs. Place on a grate in a baking dish sprayed with cooking spray. Bake in the preheated oven for 20 minutes.

Remove and spread ? cup marinara sauce over each breast, then place some mozzarella and Parmesan cheese on each. Bake for an additional 5 minutes, remove and let rest for 5 minutes before serving.



Gnocchi bake:
500 g gnocchis, 1 onion/shallot, 250ml milk, 1-2 tbsp flour, a knob of butter, 250 ml chicken stock, 1 egg yolk, 70 ml double cream, 50g Emmental cheese, 50g Parmesan cheese, 1 garlic clove

Sweat the onion/shallot in a bit of olive oil. Add milk, chicken stock, flour and butter, bring to boiling point stirring all the time (so it won't catch at the bottom of the pan). Add 25g Parmesan and 25g Emmental cheese.
Peel and cut the garlic clove into halves, rub a medium size gratin dish with the garlic and butter it. Pour a bit of the white sauce into the dish, spread the gnocchis, cover with the remaining sauce and sprinkle the grated cheese over the top. Put under a medium/hot grill (or combination grill and oven) for approx. 20 mins. Serve with a mixed salad and French dressing. Garlic bread goes down well.
This will feed 4 with average appetite - adapt for larger crowd.
If you want to make this a little more substantial you could add some cubed pancetta to sweat with the onions or fry a chicken breast wrapped in parma ham. For dessert: fresh fruit salad with a dash of cointreau and a dash of cream.
Quick and easy and went down a treat with my guys a couple of weeks ago.

Coq au Riesling

My boyfriend loves this


Ingredients ?2 x 15ml tablespoons garlic oil
?150g bacon lardons
?1 leek, finely sliced
?12 boneless, skinless chicken thighs
?3 bay leaves
?300g oyster mushrooms, torn into strips
?1 x 75cl bottle Riesling double cream (optional)
?Salt and pepper to taste
?1-2 tablespoons chopped fresh dill to serve

Method

1.Heat the oil in a casserole or large, wide pan and fry the lardons until crisp.
2.Add the sliced leek and soften it with the lardons for a minute or so.
3.Cut chicken thighs into 2 or 3 pieces each, tip them into the pan with the bay leaves, torn mushrooms and wine.
4.Season with salt and pepper to taste and bring to the boil, cover the pan and simmer gently for 30-40 minutes, stirring in the double cream for the last couple of minutes if you want. Like all stews, this tastes its mellowest best if you let it get cold and then reheat the next day. But it's no hardship to eat straight off. Whichever, serve sprinkled with dill and together with some buttered noodles.
Serves: 6

and maybe some fruit salad for pudding?

As a guy speaking , i would advise you to go with the roast chicken and mashed potatos , keep the curry idea for when its just you and him one night.



Steak, mash and gravy, green beans with pepper, garlic bread and for desert do a chocolate cakes omg its making me hungry just thinking about it!!!:) good luck
