Pot luck purgatory?
My work is having a pot luck next Friday and I haven't got a clue as to what to bring. I don't want to bring anything sweet or just chips and dip. And it can't be hot; there's no way to keep it hot until lunch and no way to heat it afterwards. Any healty and tasty suggestions? I was thinking maybe of making Gespacho.

well you could make some wrapes there always good .... flat bread spreadable cheese and baby spinich and what meat you and co- workers like spread cheese over bread i like whole wheat add baby spinich and meat roll up and slice you have a tray of roll ups that are very healthy and good hope this is a help to you and have a great lunch

You could make devilled eggs ~ those always go over well when I bring them to Potlucks.
this is always a favorite we call it veggie pizza
buy a can of crescent rolls lay them flat on a cookie sheet mending them together. bake till golden brown at 350
cool and spread snappy vegetable dip on top
sprinkle with fresh chopped broccoli, diced carrots and diced green onions
cut into large bite sized pieces and sprinkle shredded cheddar on top.
warning if you bring this once they will want it every time!! lol
you can use any veggies you want but this is a really good combo
i always double the batch as it's a big hit.

7 layer taco dip with tortilla chips (Taco Bell recipe)
iced tea
ice chest full of water bottles and starbucks frappacinno drinks and energy drinks and diet sodas
We have pot luck at work too. Typacally ppl bring things like cheese ball, tortilla roll ups, vairtes of dips and spreads, shrimp coctail etc. I have made potato soup, hankey pankey, hot wings, white chili and different things that I can put in the crock pot. The one thing people ask me to bring more than anything is BLT Spread. Its simple, fast and so delicious.
1/2 lb bacon (cooked and crumbled)
2 meduim tomatos (seeded and chopped)
8 oz. container sour cream
1 1/2 cup mayonaise
Mix all ingrediants and chill at least 1 hour
Serve on baguettes sliced into finger size peices.
The main thing is please don't stress about it. Its just a pot luck lunch. Everyone brings and enjoys. Its fun and typically we get to try new things and enjoy.
We make a soup called Pig-out Soup, any vegetables you can find,a base of V-8 veg. drink,we use low sodium,but any thing will work, to that we add one 12 to 16 oz. can of carrot juice. Heat up the base while you start prepping the veggies,slowest cooking ones first. Season with your favorite spices,blend it up for Gaspacho or leave it chunky for heartier fare. Serve it hot or cold.P.S. the carrot juice is optional.
