Question:

What can I serve guests for a "light lunch"?

Answers:
A wish sandwich, ya know where you have 2 pieces of bread and you wish ya had something to go in it.

Quiche and a proper salad.

Try looking on food network's website. they have the best entertaining ideas.

Apocalypse Bean and Rice Soup. Low calories and fills you up. The pepperyness makes the eater feel satisfactorily fed.

1/2 cup of great northern beans
1/2 cup of cranberry beans (a.k.a. roman beans)
2.5 quarts of water in a three quart pot

Cook the beans in the water for about 2 hours. Then add

1 teaspoon red pepper
1 teaspoon cumin
1/4 teaspoon black pepper
1 teaspoon leaf oregano
2 teaspoons cajun spice
1 tablespoon minced garlic
1/2 cup chopped onion
10 slices of pepperoni

(You can optionally also add diced mushrooms, carrot rounds, or chopped bell pepper.)

Cook all this stuff for 15 minutes, then add:

1/2 cup of long grain white rice

Cover pot and cook on moderate heat for another half hour, or until rice is done.

those little delicate sandwiches with the cheese and tuna in them :)

start of with a 3 cheese platter with cracked pepper crackers/strawberries and apricots can be thrown in if u want.
platter of cured meats to follow with some lavash bread/ greek style youghurt and some nice greek style salad with apple cider vinegar.
3 cheese platter to finish with . go heavy with the fruits and make sure they compliment your cheeses
believe me your guests will want to have your babies zenb

Mini croissants with chicken or tuna salad inside and a side of tomato, cucumber and feta salad with greek vinagrette and a pineapple sorbet for dessert. Or a tuna macaroni salad stuffed into hollowed out tomatoes. You can make this quickly by purchasing plain macaroni salad at the supermarket deli and adding albacore tuna, celery, onions, frozen peas , shredded carrots and shredded cheddar.

COTTAGE CHEESE PLATE
Quick, easy, nutritious and adaptable - a perfect light lunch for days when it's too hot to cook. Choose the accompanying fruit and/or vegetables to provide a variety of colors and textures, based on what you have available. Can be increased to serve any number.

Ingredients:
1 large or several small leaves of any kind of greens
3/4 cup cottage cheese
1 cup cut up assorted fruits and/or vegetables
1 pinch paprika and/or turmeric (optional)
edible flowers or fresh herbs for garnish (optional)

Directions:
* Arrange greens on a plate (chilled, if you wish): 1 large or several small leaves ( lettuce, spinach, kale, chard, etc). Put cottage cheese on the greens.
* Scatter your choice of fresh fruit and/or vegetables around the mound of cheese in an attractive arrangement.
* Sprinkle paprika and/or turmeric, if using, over the cottage cheese. Garnish with edible flowers or fresh herbs, if you wish. Good served with a slice of crusty bread, crisp crackers, or a chunk of corn bread.
Prep Time: 10 minutes. Servings: 1.
