I'm assuming that you are putting to on 6 inch grinder rolls: you will need 400 slices of each bologna, salami, and turkey. 200 slices of cheese, but i suggest provolone. 8 to 9 heads of lettuce. 20 tomato and 8 onions. double it if you are using 12 inch subs.
Bologna, Turkey, American Cheese = 12.5 lbs. each(200x1ounce each=200/16 ounces per lb=12.5)

(it goes further and you don't need as much) Total meat and cheese per sandwich = a little more than 3.5 ounces Tomatoes = approximately 50 if you slice thin and cover 4 sandwiches per tomato. Onions = 10 = slice thin and seperate rings = use red onions because they are sweeter. Lettuce = 10 heads shredded for a generous layer.
hold the onion on some. not everyone likes onions and you can't just pick them off because their flavor is all over by the time you get the sandwich.
