Question: Lots of Hispanic food for Graduation Party but with little $. What you you recommend?

So, I'm going to give my self a graduation party (getting my BA at 30) and inviting about 100 people because I have a large family. I want to make it as unstressful and inexpensive as possible, so I've started buying silverware and wine and drinks as I find them on special... BUT I don't know what to make for dinner... I need as many ideas as possible please. Thank you.
