Question:

20 people. How much of each dish do I order?

I want to order several dishes from a restaurant. Beef strogonoff, Chicken a la king, spanish rice, waldorf salad, spring rolls. How do I estimate how many plates of each to buy. The portions in a single plate of any are enough for 1 person. I will put the food into serving dishes when I bring them home from the restaurant


Answers:
I would order 5 of everything. That way each guest can "sample" each dish taking about 1/4 of each and still enjoying a plate full with a nice variety. Almost like having a buffet.

My guess would be to do a total of 18 servings of the main (i.e. 9 beef stroganoff, 9 Chicken) about 16-18 of the other courses.

If the portions seem extemely geenrous then you can subtract another one or two portions.

For 20 people to serve food at home, I would order the
following, assuming 1 portion is enough for 1 person:-
1. for beef strogonoff, chicken ala king and spanish
rice - 12 portions each type;
2. for waldorf salad and spring rolls - 20 portions each type;
Then I would mix and dish out the food for each person
as planned:-
Each person will be served 1/2 portions of beef strogonoff,
chicken ala king and spanish rice with a full portions of waldorf
salad and spring rolls.
The remaining 2 portions of beer strogonoff and chicken will
be kept aside in case for emergency.
