Question: I need a quick and easy finger food for a Christmas party.?
Something that goes over pretty well. I don't want to bring any home.

Answers:

These are easy to make and eat. They're also easy to improvise with, so don't feel like you have to stick to the recipe precisely. I've added crab meat, shredded chicken, salad shrimp, etc and they're all good -- plus a little different from the usual.

Basic recipe:
1 8 oz block cream cheese softened
1/2 c sour cream
1/2 c grated cheddar
1/4 c each green and red bell pepper minced fine
1/2 bunch green onions minced (including tops)
salt and pepper to taste
small can sliced black olives

Blend the cream cheese and sour cream until smooth, add other ingredients and stir in. Spread on flour tortillas (make sure they're at room temp or warmed a little to be more pliable. You can use flavored wraps if you'd like to). Roll the tortilla up and wrap it tightly in plastic wrap. Refrigerate. When cold, slice about 1/2 to 1/3 inch thick. Serve with salsa.

Once you have the basic recipe complete, that's when you can add whatever you think would be good. I've done smoked salmon, left out the cheddar and olives but added some red onion and capers. YUM!

Is it a family party? Work party? Random social party? What's the style? Casual or more formal? A lot of that can play a factor in preparing something.

My extended family has lots of children in it, so things like pigs in a blanket are quick to make for that.

If you really aren't wanting to bring home leftovers, just figure how many people will be there and subtract a few. Say if you think there will be 20 people there, make whatever dish for 15. You'll have some people not show up, some who aren't hungry or have already eaten elsewhere, or who just may not like what you bring. Unless you're doing the main course like turkey or ham, it's ok to run out as long as there are other dishes.



The hardest part is peeling them...everything else is a breeze.

Classic Deviled Eggs

Serve for any occasion, whether it be a wedding feast, a picnic in the park, or for lunch or dinner!

Items Needed: (for 12 Deviled Eggs)

6 hard boiled Eggs (large)
3 tablespoons mayonnaise or salad dressing
1 tablespoon sugar
1 teaspoon mustard (honey mustard is great!)
1 teaspoon vinegar
salt & pepper to taste
paprika (optional)

To boil eggs, place eggs in enough cold water to cover completely, bring to a rolling boil over high heat.
Reduce heat to a lower MEDIUM BOIL and cook an additional 12 minutes. Promptly chill eggs so yolks stay bright yellow.

Remove shells from eggs, and halve lengthwise with a knife. Carefully remove the yolks, and place in a medium bowl. Mash yolks with a fork, and add remaining ingredients. Very carefully spoon mixture back into the egg white halves. Garnish with a light sprinkling of paprika (optional).



Aparagus rolls.

Get phyllo and defrost it.
Take a sheet of it and brush with melted butter. Sprinkle parm cheese on it leaving a lip on the end. On the other end put some proscuitto on it and then a piece of steamed asparagus. Roll up and cut in half. Bake min each side in a 400 degree oven. Let cool a few minutes and then enjoy.

Fruit Dip

1 lg. pkg. Cream Cheese
1 sm. jar marshmellow fluff

Soften cream cheese in a bowl add fluff and mix well.
You can dip: apples, strawberries etc.
Trust me, you will not be bringing any home!
Great party pleaser, inexpensive and quick to mix up!
