If I were you, I'd try my hand at making some easy tapas plates, like small dishes, so she can taste and try lots of different things. As she is eating some of the plates, you can be whipping up more in the kitchen.
Shows a good amount of planning and dedication. If you just make one dish, and she doesn't like it, you have no where to go. With tapas, she can tell you her favorite and you can learn more about each other's likes and dislikes. It's a win win.

Make easy chicken cacciatore. You will need:
(1) pkg. boneless chicken breasts, about 1.5 lbs.
(1) 4 oz. can mushroom pieces, drained - optional
(1) 28 oz. jar red pasta sauce, any kind except meat or sausage flavor
(1) 12-16 oz. box any type pasta, I like the 3 color rotini - you can also use whole wheat pasta
Place the chicken breasts in a baking dish or casserole in a single layer. Spread mushrooms over them if you like, then top with entire jar of red sauce. Make sure chicken is completely covered. Cover with lid or foil and bake at 350° F for one hour. Meanwhile, boil pasta and when it's done, put it back into the pot and toss with a little olive oil or butter to prevent sticking. Serve chicken and sauce on top of pasta. Great with a green salad and garlic bread. Leftovers are good microwaved the next day.
