Question: Dinner for my boyfriend?
Things have been a little off with me and my boyfriend lately. I want to make things up to him by cooking him dinner one night. He is a cook and he really likes anytime i'm willing to step up and attempt to cook something. I just need some ideas of something I can cook thats not too complicated. He doesn;t like seafood and isn't really a fan of pasta either.

T-bone steak mashed potatoes corn and a salad



Well, this isn't complicated, and might just impress him.
Chicken Toscana
2 large boneless skinless chicken breasts, pounded to 1/4 inch thick
1/2 c. flour mixed with a dash of salt, pepper, Italian seasoning
oil for sauteeing
1 clove garlic, minced
1 med. zucchini, sliced
1 c. portabello mushrooms, sliced
12 canned artichoke heart halves (not the marinated type)
12 black olives (Italian oil-packed, imported)
1/2 c. chicken broth (low-salt canned is fine for this)
1/2 c. decent white wine
1 T. tomato paste
1 tsp. powdered beef bouillion
4 Tbs. butter, cut in pats and frozen
Preheat oven to 350
Dredge chicken in seasoned flour and brown quickly on both sides, about 4 minutes per. Saute garlic, mushrooms and zucchini until crisp-tender and add rest of vegies.Blend well, and set veg. aside. Add broth and wine to pan bring to boil; let boil until reduced by half. Add tomato paste and bouillion and a dash of pepper and Italian seasoning, and start rotating pan while you whisk in frozen butter one piece at a time, incorporating fully until sauce is thickened. Taste and correct for salt and pepper. Put chicken in 9by13 baking pan, spoon vegetables over, and top all with sauce. Bake 15 minutes until hot through. Great served w/ parmesan polenta, or plain pasta, or orzo.

You might want to try and easy chili recipe. Put out lots and lots of toppings and have fun fixing up your bowl of chili. It makes it relaxing and fun especially since you can have it ready ahead of time before he gets there.

My brother LOVES chicken divan. But anything meaty would probably be good (whats with guys and meat?) steak, prok chops, something with chicken, potatoes or rice for a side, and soe veggies or salad. Desert is really the time to impress him though, with cheesecake or some thing delicioud!
