Question: 3 course dinner for parents. Any ideas?
My mum has been going through a rough time which has been making my family rather dreary. So my sister and I have decided to make a 3 course dinner for my parents, what could we make?? They like good, honest food. It needs to seem like it was hard but was actually simple.

I good salad, spaghetti and meatballs, cheesecake.



Starter - pepper and feta parcels -

Ingredients

* ? red onion , peeled and cut into wedges
* 4 baby courgettes , halved and sliced
* 16 small cherry tomatoes
* 16 small black olives
* 200g feta cheese
* 2 tbsp shredded basil
* olive oil
* 4 red peppers , halved, seeds removed

Method

1. Mix the onion, courgettes, cherry tomatoes and black olives. Crumble over the feta and add the basil. drizzle with olive oil and season.
2. Divide mixture between the pepper halves and wrap each in tin foil. Arrange on a baking tray and cook in a hot oven or on a rack over the barbecue until the vegetables are tender.

Main - chili prawn linguine -

Ingredients
10 – 12 large uncooked prawns (tiger prawns work well or for a change you can use scallops)
3 large cloves of garlic
2 med fresh red chillies
? a pack of linguine
2-3 tblsp of crème fraiche
2 limes ( juice and zest)
a little chopped fresh coriander

Method

Put on a large pan of water for the linguine, while this is coming to the boil chop the garlic and the chillies ( I remove the seeds), then take the crème fraiche and put it in a small dish then add the zest and juice of the limes ( if it goes to watery add a little more crème fraiche) mix and put in the fridge.

When the water is boiling add a pinch of salt and a few drops of olive oil then put in the linguine.

While this cooks heat a large pan with a little oil in it put in the garlic and chillies and gently fry for a minute or so, then add the prawns and cook until they turn pink.

Drain the linguine well and add to the pan turn of the heat and stir until well mixed add the coriander and serve onto warmed plates, then drizzle some of the crème fraiche / lime mixture on top.

Serve with toasted ciabatta thats been drizzled with olive oil


Dessert - no bake lemon cheesecake -


Ingredients

* 14 HobNobs (200g), crushed into crumbs
* Zest and juice of 3 lemons
* 300g lemon curd
* 500g ricotta
* 600g Philadelphia, at room temperature

Check you've got

* 100g butter, melted
* 1 tbsp cornflour
* 75g golden caster sugar, plus 2tsp golden caster sugar for the lemon topping


Method

1. For the base, mix the biscuit crumbs and melted butter together. Press firmly into the base of a greased 20cm, deep loose-based tin and leave in the fridge to chill.
2. Meanwhile, mix the cornflour with the juice of 1 lemon until smooth. Add lemon curd, zest of 1 lemon and 2tsp sugar and bring to the boil, stirring. Simmer for 1 min, then tip into a bowl. Chill for 20 mins.
3. Mix ricotta, cream cheese, remaining lemon zest, juice and sugar until smooth. Combine with 1?2 the lemon curd mix; spread onto base. Dot lemon curd topping on top and swirl to create a marble effect.
4. Chill for at least 4 hrs or overnight to set. Release cheesecake from the tin (heat the outside edges of the tin with a hot cloth to make it easier). Smooth the sides with a palette knife and transfer to a plate.



Hot Crab Meat Dip

1 can Flaked Crab Meat (next to Tuna Fish) or 1/2 lb. fresh Imitation Crab shredded into flakes
8 ounces cream cheese
4 dashes Worchester Sauce
1 dash Tabasco Sauce (optional)

Mix everything together in microwave proof baking dish and heat on high until bubbling. Serve with crackers.

Beef Brisket

2 lbs. Beef Brisket Roast (or Tri Tip Roast)
1 package Lipton Onion Soup (dry - do not dilute)
10 ounce can condensed Tomato Soup (do not dilute)
1/2 can water (use empty soup can to measure)
2 bags frozen "Stev Vegetables" (in freezer section)

Put everything together and either crockpot it on low for 8 hours, or 4 on high OR place in a covered oven proof baking dish and bake 350 degrees for 2 hours. Serve with a green salad and some dinner rolls. Slice meat thin to serve.

Fruit topped Cheesecake

Graham Cracker Crust Shells (get the invididiual ones in the baking section of the grocery store)
1 container of Philadelphia Cheesecake Filling
1 can (any flavor) Fruit Pie Filling

Put Cheesecake Filling in pie shells, top with Pie Filling and refridgerate until ready to serve.

All of these dishes should serve 4 people.

Baked Italian Chicken, Seasoned Red New Potatoes and Steamed Asparagus

Baked Chicken -
Preheat oven to 375 degrees Farenheit
4 chicken drumsticks, 4 chicken thighs
Rinse chicken well then place in a large bowl and marinade in your favorite Italian salad dressing for 30 minutes
After marinading, place chicken in a baking dish and season well with garlic powder, onion powder, paprika, salt and pepper (if your parents like pepper).
Place in heated oven uncovered and bake for 45 minutes to an hour.
Once done, drain excess fat carefully and serve

Seasoned Red New Potatoes-
Rinse potatoes and cut in halves then quarters
Place in a cooking pot and fill pot with water just above potatoes
Cover with a lid and boil potatoes on med. heat for 25 minutes
Check for doneness by sticking a fork in one of the potatoes; if soft, turn off heat, uncover and let stand for 15 minutes.
After 15 minutes is up, take 1 teaspoon of butter (i recommend Smart Balance Omega 3) stir into potatoes; add 1 teaspoon of garlic powder, 1 teaspoon of salt, and 1 teaspoon of dill seasoning; stir and serve


Steamed Asparagus-
Rinse asparagus well, chop off small part of the ends
Place in large saucepan with just a little bit of water
Cover and steam on med.high heat for 20 minutes
Uncover; drain water; stir in 1/2 teaspoon of butter and sprinkle pinch of salt and pepper; serve

a Mom who cooks often:-)



prawn cocktail easy
chicken casserole, chicken breast with carrots celery and onion 2 oxo cubes.
cook about 2 hrs thicken with gravy granaules, not too thick.
serve with mash or new potatoes and a veg.
some sort of crumble you can buy the mix at tescos
You could get tinned plums or apples and of course custard



i suguest for the entree do a classiccesar salad, put add fansy things like almonds cheese and bacon bits. For the maine corse try doing lasagna its simple and tastes great! you can a recipe for it anywhere if youdont know how to make it. And for desert maybe some homemade pie or brownies! :)
