Mocktails are fun because they look like alcholic drinks, but aren't.

Another fun drink idea is to play off of a theme, if you have one?
For a really popular example: make Butterbeer (from Harry Potter) using cream soda and butterscotch syrup.

Or try a popular drink like Dr. Pepper, but boil it so it's hot (not too much though), then squeeze some lemon or lime juice in it. I know it sounds weird, but it is actually really tasty.
