Divide the food table into 2>>>one side is Princess style and the other side has the cars and checkered flags. (Can make checkered flags using frosted square brownies....have 4 rows of 3 brownies each>>>do it dark, white, dark
white, dark, white

white, dark, white......and have a long dowel run down the right side of all the brownies. THEN do another one because you want to cross the dowels for the "2 flags" effect....Pole will be on left side of brownies. Have a car setting between the 2 "Flags".
Kid friendly foods>>>chicken nuggets, chicken fingers, tater tots, fruit kebobs--like sliced bananas, strawberry, (on a straw, stick too dangerous), jello jigglers, mini sandwiches made of choices of egg salad, PB&J, etc. (cut breads out with a cookie cutter....use a car shape and a star or flower shape for the girls' side), any kind of salad that they'd eat (you know them best and what guests are coming), can even serve cups of kids' yogurts.
I would pick a weekend day so your family will all be able to attend. Why don't you email and ask which date works best? Either on your son's birthday or on the 11th or 12th.
I would go with cupcakes in the boy's theme and a small cake for the 1 year-old in her theme. You want that little one to be able to touch the cake and get messy for really cute pictures. If you check the bakery in your local grocery, they will probably have a very small cake that is commonly used for one year birthdays. My daughter had one that was about four inches in diameter.

Yeah I would combine the two.It's easier not only for you but also for your guests.The weekend of the 11/12 is a good time frame.But I would get them each their own cake so they both feel individually special.You could get two small cakes instead of one big one.Disney is a good theme because it can be for a boy or a girl and Disney party stuff is easy to find.Have fun!!!
you could have it on the 11th, which is a saturday! andd fingerfoods you can put out some chips, crackers, cheese, pepperoni, fruit and get a sheet pizza and cut it up into littler squares which are easier for little kids to eat.. also i think cupcakes would be a really cute idea with like little rings put in the cupcakes for the kids to have!
