Question: Having my sister in-law and her partner over for dinner tonight?
Have no idea what to cook im open to anything i want something healthy but tasty. tia

Answers:

chicken.

Chicken legs , seasoned and fried skin down until brown in a little olive oil and butter.
Turn over and turn heat down.

Put some potatoes in oven for roasting. after 40 minutes, drain off chicken fat except a small amount and pour over potatoes.
remove chicken to warm dish.
Add large glass of crisp white wine to pan to remove sticky chicken bits, put chicken back in with 8-12 garlic cloves slightly crushed in skin, a handful of chopped parsley, cook for a further 15 minutes.
remove chicken, add 2oz Fresh unsalted butter, juice of a lemon and a further handful of parsley, when butter melted, pour over chicken, serve with potatoes and salad, or fresh crusty bread. I eat the garlic but you can remove and throw away if you do not like it.
This is the best chicken recipe I know, it is yummy!



Easy Chicken Tetrazzini

1 lb boneless chicken breasts or a whole chicken cut up
1 lb spaghetti
1 small box velveeta cheese
1 can rotel tomatoes
1 can cream of chicken soup

In a large pot of boiling water seasoned with salt, pepper, garlic power and onion powder place (or use fresh garlic and onion minced) place chicken and cook gently til done (about 20 minutes)
Remove chicken from water (save water) and return water to a boil.
Add pasta and cook til aldente
Cool chicken and cut into bite size pieces
In a small pot put soup, cheese and Rotel and melt slowly together
Drain pasta and place in a large casserole dish and mix in chicken and cheese mixture. Bake at 350 for about 10-15 minutes til bubbly and serve with some crusty bread. This freezes exceptionally well so make a double batch and freeze one without baking. When cooking later be sure to defrost before baking



oooh!! I have something great for you.. it doesn't really require a lot of by the recipe measures you can take some whole wheat pasta like fetuccine or penne or some other kind and cook it aldente.. grab some veggies.. any you like.. thicker ones like carrots will take longer vs zucchine (not sure that's spelled right) or eggplant. add them to a pan of melted butter and sautee them with a few spices that you like.. uhm.. like rosemary or oregano..whatever you like and then just toss the pasta with the veggies when done.. depending on the veggies you an fry ( skillet not deep fry)/ brown up some fish.. white not pink.. or chicken and add it to the side.. if you want you can add a little drizzle of balsalmic vinegar over the top depending of the spices.. personally I don't like the balsalmic but some do. :) very healthy and awesomely yummy.



SHEPHERD'S PIE

1 lb. ground beef
1 lg. onion, chopped
Salt and pepper
1 can cream style corn or any vegetable
Mashed potatoes

Saute ground beef and onion until meat is browned. Drain off fat and season with salt and pepper to your taste. Spoon meat mixture into bottom of lightly greased 1 quart casserole spread corn over meat. Add mashed potatoes over corn. Bake at 375 degrees about 25 minutes. Place under broiler for 2 to 3 minutes if top isn't browned.



Pasta is always good. Like you can make Meat lasanga..or you can make simple pasta with a green salad on the side. its easy and good!



what about fish...thats really healthy!!!
