Green Sided Potato Chip?!


Question: Green Sided Potato Chip?
I was eating Lays Wavy potato chips, and as i was picking one up, i saw that the whole outer edge of it was a dark green. Is this just a "green potato chip" which is harmless or was it mold? We bought the bag yesterday!

The green is totally safe to eat.

The reason you see green is because potatoes grow underground and the part that is green was exposed to sunlight and produce the plant pigment called chlorophyl. Chlorophyl gives all plants their green color.



actually the green sided potato chip[s are ok to eat the green is from the potato being sunburned or exposed to light while it is still growing the dirt will wash off the potatoes and they will start to prduce a green tinge to them from beig exposed to the sunlight



Occasionally there will be chips with a Light Green color tint to them... This is nothing to worry about as these chips are cut from young immature (or green) potatoes which are usually full size but green around the edges... Unless your chip was fuzzy or tasted funny, you will be fine...



There is absolutely nothing wrong. The green color just happens sometimes. Alton Brown even talked about it on one of his shows. I tried to find the episode but was unable to.
